So, we’re still living in a total deep freeze, but I’m told that it’s actually going to be +9 on Monday! Woop! That’s quite the turn-around. At least it won’t end up being a long haul of crazy temperatures!

Now, it’s high time that I posted a new granola recipe! The absence is not due to my lack of love for granola, I think it’s just that I hadn’t thought about trying a new recipe out for it in a long time. I have so many good ones already (here)! My favorite has always been this chocolate coconut pecan granola. It’s just such a familiar old friend. No surprises and always delicious.

Anyway, I often throw dried cranberries into that recipe, and love it, so decided I should dedicate a whole granola recipe to my love for dried cranberries!

And now I have a new favorite. 😉

What’s in cranberry pecan granola?

In this recipe you’ll find:

  • large rolled oats
  • pecans
  • dried cranberries
  • cinnamon
  • salt
  • maple syrup
  • coconut oil

The maple syrup and coconut oil is what binds everything together. If you want large clumps, I would suggest swapping the maple syrup for honey. It’s extra stickiness helps hold it all together. 

I added white chocolate chips at the end, once everything has cooled down.

How long does it take to make this granola?

You’re in luck! Like most granola recipes, the only thing that stands between you and a fresh batch of flavorful homemade granola is about 45 minutes. This time is mostly cooking time, since it takes all of 5 minutes to throw the ingredients together!

Keep your granola baking at a low heat (300 F) and stir it every 15 minutes or so to prevent any burnt spots.

Once it comes out of the oven, allow it to cool completely before adding any chocolate or breaking it into clumps!

The bright red cranberries you see here in the photos are actually just some sugared cranberries that I had leftover from another recipe. But don’t they look so pretty in the mix!? Here’s my friend Marcie’s recipe for those.

How long will cranberry granola stay fresh?

Generally, homemade granola stays fresh, in an airtight container, for up to 2 weeks. Sometimes I have it kicking around longer and I still use it and it tastes just fine! It normally doesn’t last that long though 😉

Not only is it a great snack, granola is SO good as a topping on oatmeal, or in a bowl of cereal, or just all on its own with a bit of milk!

Description

Ingredients

Scale
  • 3 1/2 cups large flake oats
  • 1 cup pecans, chopped
  • 1 tsp ground cinnamon
  • 3/4 cup dried cranberries
  • 1/2 tsp sea salt
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil, melted
  • 1 tsp pure vanilla extract
  • optional: 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 300 F and line a large baking sheet with parchment paper. In a large mixing bowl, stir together the oats, pecans, cinnamon, cranberries and salt. In another bowl, whisk together the maple syrup with the coconut oil and vanilla extract. Pour the mixture all over the oat mixture, and stir to combine thoroughly.
  2. Spread the mixture evenly out on the prepared baking sheet. Bake for 45 minutes, stirring the granola every 15 minutes with a large wooden spoon. Remove from the oven, and allow the granola to cool completely before adding the chocolate chips (if using). Break the cooled granola up and store in an airtight container. Enjoy!

Granola will keep fresh for up to 2 weeks when stored at room temperature in an airtight container. I’ve eaten it beyond 2 weeks but it will start to taste slightly stale after a while!

  2. Dried cranberries are one of my favorite snacks! Throw some in granola and I don’t trust myself not to eat it all in one sitting :). This looks delicious! PS, a whopping +9? How are you going to deal with all that warmth, haha!
