SO – this weekend we had a great first camping trip! Other than a few unexpected setbacks. If you had watched my Instagram stories over the weekend you would have seen a tow truck as part of the weekend festivities. Just as we rolled into the campground our truck started SPEWING horrid black smoke, and once we turned it off to check out what was going on, it wouldn’t turn on again. So…..that was fun.

We won’t have any news on the truck until later this week but at least we still got out camping! Wally turned 4 on Saturday and we had so much fun celebrating him. We went for a hike, smacked a piñata, turned on the bubble machine and CAKE! It was a good day. We hitched a ride back with some friends and I have to say, as much as I love camping, there is nothing like sleeping in your own bed!!!

And you know what I’m going to say next. The other thing I love. 3 ingredient recipes!!

This maple Dijon salmon is my newest!

How do you make maple Dijon salmon?

I’m a bit of a one-trick pony when it comes to salmon. We probably have it once a week, but I don’t switch up my game all that much. Usually we just do a bit of spice, butter, lemon or dill on it. It’s delicious! But sometimes you want something a little different, right?

This maple Dijon salmon is super easy to make! Just lay a fresh hunk of salmon on a parchment-lined baking sheet, and whip up the maple Dijon sauce. Whisk together 2 tablespoons each of maple syrup and Dijon mustard, then spread it over the salmon.

Pop it in the oven and bake for 10-11 minutes or until the salmon flakes easily with a fork! I also love turning the broiler on high at the very end of the cooking time to crisp up the top of the fish for about 1 minute. It’s so good!

So this dinner can be yours in under 20 minutes! How great is that!? Maybe I need to start a 20-minute dinner series!

What do you serve maple Dijon salmon with?

So many options! I went with roasted baby potatoes this time but you could do rice, veggies or salad with it too. Here’s some of our favorites sides:

We love fresh, buttery salmon. If you love it too then you have to try it cooked this way! Not only is it easy, it’s delicious!

Leftover salmon can be kept in the fridge, and it’s terrific chopped up in a salad or in a sandwich for an easy next-day lunch!

Now here’s to hoping camping trip #2 goes a little more smoothly 😉

Switch up your salmon game with this maple Dijon salmon! Spread a delicious maple Dijon glaze over your salmon before baking it to perfection in the oven!

Ingredients

Scale
  • 1 1/2 lb – 2 lb salmon fillet, skin removed*
  • 2 tbsp Dijon mustard
  • 2 tbsp pure maple syrup

Instructions

  1. Preheat the oven to 425 F and line a baking sheet with parchment paper or aluminum foil. In a small bowl, whisk together the mustard and maple syrup. Using a spoon, slather the sauce all over the salmon. Place in the oven and bake for 10 minutes, then check the thickest part of the fish with a fork to see if it flakes easily. If it is still very pink and not flaking, bake the fish for another 2 minutes and check again. Place under the broiler on high for 1 minute until the top looks crispy. Serve immediately.

Leftovers can be kept in an airtight container for 3-4 days.

Notes

*If your salmon comes with skin on, place the fish skin side down on the baking sheet.
