There are so many reasons to love this flatbread! It’s a perfect recipe for a quick and easy dinner, lunch or even snack. This cottage cheese flatbread:
- is only 2 ingredients (three, if you’re counting the seasoning)
- contains 1 cup of cottage cheese which has 25 grams of protein
- contains 2 eggs with 12 grams of protein
- is a versatile recipe that’s great for many uses including sandwiches or flatbread pizza!
This flatbread also takes less than 5 minutes to put together and only 30 minutes to bake! It can also be easily doubled.
Ingredients for Cottage Cheese Flatbread
As mentioned, you only need 2 ingredients for this recipe:
- Eggs
- Cottage Cheese: I like to use full fat cottage cheese, for the best result!
The Italian seasoning is an optional ingredient, and you may want to leave it out depending on your intended use for the flatbread but I like including it for extra flavour!

Recipe Tips and Tricks
- Try different seasonings other than Italian seasoning. You could add a pinch of garlic powder, fresh or dried basil, taco seasoning, or any other seasoning you have on hand! You could even add some cinnamon and sugar for a sweeter version.
- Use a quarter sheet pan (13″x9″) to avoid having to “create” your shape. I like these ones from Nordic Ware.
- Spray your parchment paper with nonstick spray to ensure easy removal!
- If you want a thicker flatbread, it’ll take a bit longer for it to bake so just keep an eye on the edges for browning before removal.
- Sprinkle shredded mozzarella cheese on top of the flatbread and broil in the oven for a couple of minutes!
How To Make 2 Ingredient Cottage Cheese Flatbread

- In a blender, combine the cottage cheese and eggs together and blend on high until smooth and there are no chunks remaining. If using seasoning in the recipe, add it now and pulse a few times.
- Line a quarter-sheet pan with parchment paper and give it a quick spray with nonstick spray.
- Spread the blended cottage cheese mixture evenly over the parchment paper, using the back of a spoon to smooth it out, reaching the edges.
- Bake the flatbread in an oven preheated to 350F for about 30 minutes, or until the edges are slightly browned. Remove and allow the flatbread to cool for 10 minutes in the pan before grabbing an edge gently and removing it from the parchment paper.

Honestly it’s hard not to just eat this thing straight from the oven while it’s still warm, but there are a million great ideas on how to eat this cottage cheese flatbread!
When it has cooled from the pan, you can remove it from the parchment paper and cut it into portions or even roll it up.
Here are some of my favourite ways to eat this cottage cheese flatbread:
- cut into pieces and turned into a base for a delicious sandwich!
- served with scrambled eggs or a fried egg with avocado (avocado toast style)!
- keep the flatbread all in one piece and add pizza sauce, cheese and your favourite pizza toppings. Pop it into the oven to broil on low for a flatbread pizza!
- make a sweeter version of this flatbread with cinnamon and sugar, then drizzle honey over the top
- add pesto to the flatbread and top with cheese, shredded chicken or even shrimp
- roll up the flatbread with toppings inside for an easy lunch or dinner wrap
This flatbread also freezes very well. If you want to double or triple the recipe to have extra on hand, wait until the flatbread is completely cooled and then wrap the bread in plastic wrap or place into an airtight container. It’ll store for up to 2 months in the freezer and thaws very quickly overnight in the fridge, or you can even toast it right from the freezer!

Instructions
- Preheat the oven to 350 F and line a quarter sheet baking tray with parchment paper**. Give the paper a light spray with nonstick spray.
- In a blender, combine the cottage cheese and eggs together and blend on high until smooth and there are no visible chunks remaining, about 1-2 minutes. If using seasoning in the recipe, add it now and pulse the blender a few times.
- Spread the blended cottage cheese mixture evenly over the parchment paper, using the back of a spoon to smooth it out, reaching the edges. Note: If you’re using a larger baking sheet, just spread the mixture into the desired size/shape and don’t worry about reaching the edges.
- Bake the flatbread for about 30 minutes, or until the edges are slightly browned. Remove the pan from the oven and allow the flatbread to cool for 10 minutes in the pan before grabbing an edge gently and removing it from the parchment paper.

Leftover flatbread can be wrapped in plastic wrap and stored in the fridge for 2-3 days or in the freezer for up to 2 months. You can toast the frozen flatbread straight from the freezer or thaw it overnight in the fridge.
