Feed your hungry family easily with this super simple baked grilled cheese recipe! Grilled cheese in the oven means you can make up to 8 sandwiches all at once and it’s all hands off!

I don’t know about you, but grilled cheese is a STAPLE in our house. I’m sure you’re assuming it’s because I have three small kids, but to be completely honest, my husband and I love a good grilled cheese sandwich ourselves.

This recipe for baked grilled cheese means I can make a big batch for everyone all at once! It’s a great addition to soup night or just an easy lunch at home.

Why Make Grilled Cheese In The Oven?

Up until this year I’ve always just made a batch of grilled cheese for the family by laying out multiple slices of bread, putting the cheese on and buttering both sides of the sandwich. Then I add the sandwiches, usually one at a time, to the pan and cook until golden brown and delicious!

This tried and true method is just fine BUT the one problem is that if you’re trying to get lunch on for a few people all at once, and you have some hangry monsters on your hands, you either have to use multiple pans on the stove or try and squish a couple of sandwiches into one pan. Time!

The baked grilled cheese method saves a lot of time AND cleanup. The recipe is the same but its way less time consuming, plus I find it’s very satisfying pulling the cheesy sandwiches apart from each other once they come out of the oven!

Ingredients For Baked Grilled Cheese

For this recipe you’ll need the following:

  • Bread: My kids love when I use white bread for their grilled cheese, but I usually use a high-fibre bread like this one from Cobbs. Sourdough would also be delicious but you can use whatever bread you like! Keep the slices to about 1/2″ thick.
  • Sliced Cheese: When I make grilled cheese I like to combine cheddar cheese with mozzarella cheese slices. This time I decided to get the best of both worlds by using marble cheese! The cheese should be sliced to about 1/8″ thick.
  • Butter: There’s nothing worse than having only rock-hard butter available for your grilled cheese! Use soft, spreadable room temperature butter for this recipe so you don’t rip apart the bread!
  • Optional: flaky sea salt for topping! I like adding a sprinkle of sea salt on top of the grilled cheese sandwiches once they come out of the oven.

How To Make Grilled Cheese In The Oven

This recipe makes 4 full sized sandwiches and uses a quarter sheet pan, like this one. If you are feeding an even bigger crowd, use a half sheet pan and double all ingredients to make 8 sandwiches all at once.

1. Preheat the oven to 425 F and lay 4 slices of bread next to each other on the quarter sheet pan. Place one layer of cheese slices on the bread slices (8 pieces of cheese) followed by an additional layer of cheese on top.

2. Place the other slices of bread on top, then generously butter the top of the sandwiches. Flip over the sandwiches and butter the other side of the bread slices.

3. Place the pan into the oven and bake for 8-9 minutes or until a quick peek of the underside of the sandwiches show a golden brown. Remove the pan from the oven and carefully flip each of the sandwiches, before baking for an additional 5-6 minutes in the oven.

4. Remove the sandwiches from the oven and sprinkle with a bit of sea salt. Use a spatula to take the sandwiches off the pan and on to a cutting board or plate, cutting in half to enjoy!

Recipe Tips

Make sure you have room temperature butter or a spreadable butter before trying to butter the bread or it will tear it up!

Switch things up with different cheeses such as a jalapeño Monterey jack or another favourite!

Lunchbox Idea!

While in my opinion, a grilled cheese is the best when it is right from the oven and the cheese is still warm, I’ve also packed these baked grilled cheese in a lunchbox for my kids and they loved it!

If you plan to pack for later, be sure the sandwiches have cooled down a bit before closing them up in a lunchbox. This will ensure the bread doesn’t get too soft and soggy before lunchtime!

  • 16 slices marble cheese**
  • 23 tablespoons unsalted butter, room temperature
  • optional: sea salt for topping

Instructions

  1. Preheat the oven to 425 F and lay 4 slices of bread next to each other on the quarter sheet pan. Place one layer of cheese slices on the bread slices (8 pieces of cheese) followed by an additional layer of cheese on top.
  2. Place the remaining slices of bread on top, then generously butter the top of the sandwiches. Flip over the sandwiches and butter the other side of the bread slices.
  3. Place the pan into the oven and bake for 8-9 minutes or until a quick peek of the underside of the sandwiches show a golden brown. Remove the pan from the oven and carefully flip each of the sandwiches, before baking for an additional 5-6 minutes in the oven.
  4. Remove the sandwiches from the oven and sprinkle with a bit of sea salt. Use a spatula to take the sandwiches off the pan and on to a cutting board or plate, cutting in half to enjoy!

Sandwiches are best if enjoyed immediately, but once the sandwiches have cooled down to room temperature, they can be stored in an airtight container, in the fridge, for later.

*I like to use a high-fibre white bread but any type of bread will work for this

**I love to use marble cheese, sliced about 1/8″ thick. Feel free to use a different type of cheese for your own sandwiches!
