These cottage cheese protein cookies are made gluten free and refined sugar free with almond flour, protein powder and maple syrup to sweeten!

I posted these protein cookies on my Instagram stories the other day and I got a lot of excitement from you guys! Many of you were asking for the recipe. I wanted to tweak them a bit more before I shared the final recipe but I’m very happy with the end result!
I have been doing strength training at the gym since last October so I’ve joined the high protein club, trying to find ways to get more protein into my diet without eating too many weird chemicals or junk. A lot of the store-bought granola bars are full of ingredients that you can’t pronounce. Don’t get me wrong, I still eat them, but I’d rather a homemade snack!
These cottage cheese protein cookies are a great little breakfast or on the go snack!
What Makes These Cookies High Protein?
The most obvious answer as to where these bars get their protein content is from the added protein powder. Keeping in mind that ingredients and amount of protein will vary depending on the specific brands you are using, I’ve calculated the following for these cookies:
- I’ve added 1/3 cup of powder to the recipe, which is about 38 grams of protein, depending on the powder that you’re using!
- The cottage cheese adds 28 grams
- Almond flour in this recipe adds as well as the almond flour which adds 19 grams.
So, let’s do some math. This works out to around 85 grams of protein in the entire recipe.
The recipe makes about 14 cookies in total so that means about 6 grams per cookie! Not too shabby!

Ingredient List
These cottage cheese protein cookies use the following ingredients:
Almond Flour: I like to use almond flour for not only its high protein content, but because it makes these cookies gluten free as well!
Coconut Flour: You could definitely just use all almond flour if you don’t have coconut flour handy, but I love the flavour that the coconut flour adds!
Protein Powder: You can use your favourite vanilla or cookies and cream protein powder in this recipe! I like to use cookies and cream because it is DELICIOUS! This is the protein powder that I use most often.
Cottage Cheese: Cottage cheese is the star of the show in this recipe! I love that cottage cheese has become such a staple for people lately. It really is amazing how much protein is packed into it! This recipe uses one 1 cup cottage cheese.
Maple Syrup: Since I want to keep things fairly natural in this recipe, I use maple syrup as a sweetener. I do realize that many protein powders have artificial sweeteners in the ingredient list, but the one that I listed above actually is free of any of those!
If you’re not a fan of maple syrup or would like to use something else, you could use agave syrup or even honey instead.
Butter: If you’d like to keep this recipe dairy free, feel free to substitute the butter for coconut oil instead!

Special Equipment or Instructions for Cottage Cheese Protein Cookies
These cookies are super easy to make! You’ll need a blender for the liquid ingredients to ensure everything is smooth, but other than that there is no special equipment required for these!
The cookies are prepared by mixing together the dry ingredients in a separate bowl, then blending the liquid ingredients, and then combining everything together.
The “cookie dough” is definitely wetter than your traditional cookie dough, and the cookies will not spread when baking.
Your hands might get a little bit sticky when forming the cookies, so just lightly press down on the cookies when you’re shaping them on the baking sheet!
This recipe makes about 14 cookies, and since they don’t spread when baking you can fit them all on one baking sheet!

These cottage cheese protein cookies are made gluten free and refined sugar free with almond flour, protein powder and maple syrup to sweeten!
Ingredients
- 1 cup cottage cheese
- 1/4 cup maple syrup
- 3/4 cup almond flour
- 1/4 cup coconut flour*
- 1/3 cup vanilla protein powder
- 2 tbsp melted unsalted butter
- 1/4 cup semi sweet chocolate chips
Instructions
- Preheat the oven to 350 F and line a baking sheet with parchment paper.
- In the blender, add the cottage cheese and maple syrup. Blend on high until completely smooth, scraping down the sides as needed.
- In a large bowl, combine together the almond flour, coconut flour, and protein powder. Add the cottage cheese mixture to the bowl along with the melted butter, then use a large wooden spoon to combine everything together. The “cookie dough” will be quite sticky. Add the chocolate chips and stir to combine.
- Using a large cookie scoop, or about 3 tablespoons of dough, drop the dough in mounds on the cookie sheet. You’ll get about 14 cookies in total! The cookies don’t spread so they don’t need to be far apart from each other. Lightly use your fingers to press the cookies down a bit flatter.
- Bake the cookies in the oven for 9-10 minutes or until just brown on the bottom. Allow them to cool for 5 minutes on the pan before removing them to a wire rack to completely cool. Enjoy!
Cookies will store well at room temperature, in an airtight container, for 4-5 days.

*Feel free to to use all almond flour if you don’t have coconut flour on hand
