Breakfast done right with this easy baked Nutella oatmeal! It’s a chocolate baked oatmeal recipe that makes for a warm and comforting way to start the day!

My whole family loves baked oatmeal! I know that over 2020 and beyond there was an overwhelming surge of people making baked oatmeal, thanks to a few viral TikTok videos, however; I have been making baked oatmeal since 2005!

My roommate in University and I used to love making baked oatmeal for breakfast or even a midnight snack. It’s so warm and comforting and is honestly good any time of day. Since I’m used to putting Nutella in everything, I can’t believe it took me this long to make a baked Nutella oatmeal!

What Is Baked Oatmeal?

If you haven’t tried baked oatmeal before, I hope this recipe changes that!

Baked oatmeal is typically a combination of large flake or rolled oats mixed with milk, egg, sweetener of some sort, and often some other add-ins like cinnamon, chocolate chips, blueberries or banana. The mixture gets poured into an oven safe container and then baked for about 30 minutes before enjoying.

Baked oatmeal is a great meal prep idea as you can make it one morning and eat it for the entire week, reheated or not!

In this recipe we’ll be adding in creamy Nutella!

Ingredients for Baked Nutella Oatmeal

This recipe contains all of the essential ingredients for a traditional baked oatmeal! You’ll need:

  • rolled or large flake oats
  • baking powder
  • salt
  • milk
  • vanilla extract
  • egg
  • maple syrup or honey
  • Nutella
  • optional: chopped hazelnuts or pecans

Large flake oats: You definitely want to use rolled oats or large flake oats for this recipe. I have not tried it with quick oats but the oatmeal might end up too soft, and steel cut oats may not soften up enough!

Nutella: You can use traditional Nutella, or a homemade version. You could also use an organic version with fewer additives if you’d prefer.

Milk: I used regular dairy milk for this recipe but you can easily use a non-dairy version such as almond milk or soy milk!

Directions for Nutella Oatmeal

1. In one large mixing bowl, whisk together the rolled oats, baking powder and salt. In another bowl, thoroughly whisk together the egg, maple syrup, vanilla and Nutella until combined. Next, slowly add in the milk and whisk to combine.

2. Add the wet ingredients to the dry and stir slowly until just combined. Pour the mixture into a lightly greased oven safe baking dish such as a pie plate or an 8 x 8 pan. Bake the oatmeal in the oven for 25 minutes or until the middle is no longer wiggly.

3. Remove the oatmeal from the oven and allow it to cool for a few minutes before serving, or top with a drizzle of melted chocolate or melted Nutella.

What To Top Nutella Oatmeal With?

I love drizzling some melted chocolate on top of the oatmeal and adding some chopped nuts such as walnuts. Chopped up hazelnuts would actually be delicious too!

You can also add whipped cream, a drizzle of peanut butter or extra Nutella, or vanilla Greek yogurt. Sometimes I’ll add fresh raspberries or blueberries as well!

Tips and Tricks

If you like your oatmeal a bit sweeter, you can add an additional tablespoon of honey or maple syrup to the mixture before baking!

Make this oatmeal vegan by substituting the egg for a flax egg, using non dairy milk and using a vegan alternative to Nutella.

Ingredients

Scale
  • 2 cups rolled oats or large flake oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup Nutella*
  • 1 egg
  • 1 tbsp maple syrup or honey
  • 1 tsp pure vanilla extract
  • 1 1/4 cup milk**
  • optional: chopped nuts, chocolate chips, melted chocolate for drizzling

Instructions

  1. Preheat the oven to 350 F and spray a 9″ pie plate or 8″ x 8″ baking pan with nonstick spray. In one large mixing bowl, whisk together the rolled oats, baking powder and salt. In another bowl, thoroughly whisk together the Nutella, egg, maple syrup,  and vanilla until combined. Next, slowly add in the milk and whisk to combine.
  2. Add the wet ingredients to the dry and stir slowly until just combined. Pour the mixture into the prepared baking dish, and bake the oatmeal in the oven for 25 minutes or until the middle is no longer wiggly.
  3. Remove the oatmeal from the oven and allow it to cool for a few minutes before serving, or top with chocolate chips, a drizzle of melted chocolate, or melted Nutella.

Leftover oatmeal can be stored in an airtight container, in the fridge for 3-4 days. Reheat the leftover oatmeal before enjoying or eat it cold from the fridge!

Notes

*You can use any brand of chocolate hazelnut spread as long as it has a similar consistency to Nutella brand

**I use dairy milk but you can use a dairy free alternative such as almond or oat milk
