How much do you like baked oatmeal!? It’s still one of my favourite breakfasts, even years after eating it regularly. I don’t make it as often as I’d like as it takes a bit of time in the oven, but I save it for weekend mornings when we’ve got nothing planned. It’s the most wonderful, warm, cozy breakfast to wake up to!

This blueberry baked oatmeal is made with fresh blueberries that become juicy and plump in the oven. Since blueberries are abundant in the grocery store right now, I’ve been eating this oatmeal on repeat the past few weeks. No one in my family has been complaining!

What is baked oatmeal?

I’ve got a few recipes for baked oatmeal on the blog, so if you’ve been following for a while, there’s no doubt you would have seen (and hopefully tried) one or two of them! Baked oatmeal went viral on social media during the pandemic, which I thought was so funny because it’s really not a new concept. I’ve been making it since university (and that was a while ago….)!

Baked oatmeal is essentially exactly what it sounds like. Large flake or rolled oats mixed with milk, egg, sweetener of some sort, and in in this case – peanut butter! You combine this whole mixture together and then bake it in the oven for about half an hour. Take it out and enjoy!! The result is almost like oatmeal in cake form. But it’s good for you!

What do you need to make blueberry baked oatmeal?

This oatmeal is so simple, made from nearly all pantry ingredients! Fresh blueberries are definitely the best in this recipe, although you can certainly use frozen too! Along with the blueberries, you’ll need:

  • large flake rolled oats
  • honey
  • baking powder
  • ground cinnamon
  • salt
  • egg
  • almond milk
  • melted butter
  • vanilla extract
  • fresh blueberries

How do you make this blueberry baked oatmeal?

  1. Start this recipe by preheating the oven to 350 F and lightly spraying an 8 x 8 casserole dish with nonstick spray or a bit of butter. In a large mixing bowl, whisk together the dry ingredients (oats, baking powder, cinnamon and salt), followed by the wet ingredients in another bowl (honey, egg, almond milk, melted butter and vanilla).
  2. Add the dry ingredients into the wet ingredients and stir together until just mixed. Add in the fresh blueberries slowly with a large wooden spoon until just combined.
  3. Empty the mixture into the lightly greased casserole dish and place it into the oven, baking it for 25-30 minutes or until the oatmeal is no longer jiggly when you give it a gentle shake. Remove the oatmeal from the oven and let it cool down for 5-10 minutes before enjoying. Top with whipped cream to make it a little extra special!

Can this recipe be made vegan?

You can definitely make this a vegan recipe if you’d like! Replace the melted butter with coconut oil, and replace the egg with a flaxseed egg. Here is a great example of how to make one! As for the honey, you could certainly use maple syrup instead of honey as well.

How long will this oatmeal last?

I love having leftover baked oatmeal! Save your leftovers in the fridge, in an airtight container. You can reheat portions at any time in a microwave or in a small pot over low heat.

You can also make a large batch, and once it’s cooled to room temperature, freeze the oatmeal in an airtight container for up to 2 months, thawing it overnight in the fridge before reheating.

Ingredients

  • 2 cups large flake oats
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/3 cup honey
  • 1 egg
  • 2 tbsp melted butter
  • 1 1/2 cups almond milk
  • 1 tsp pure vanilla
  • 1 cup fresh blueberries*
  • optional: whipped cream, for topping

Instructions

  1. Preheat the oven to 350 F and lightly spray an 8 x 8 casserole dish with nonstick spray or a bit of melted butter. In a large mixing bowl, whisk together the oats, baking powder, ground cinnamon and salt. In another large bowl, whisk together the honey, egg, almond milk, melted butter and vanilla.

Leftover oatmeal, once cooled completely, can be stored in the fridge, in an airtight container for 3-4 days. Reheat the oats in the microwave or in a small pot on the stove.

Oats can also be frozen in portions, for up to 2 months in an airtight container. Thaw overnight in the fridge before reheating.

Notes

*If using frozen blueberries, add them straight into the oatmeal mixture without thawing first.
