Guys, this recipe might be the most unusual one I’ve ever posted, but I’m pretty excited about it. I mean, in terms of searchability, I don’t think there’s a ton of people out there searching for TURKEY PEPPERONI salad rolls – BUT – there are likely people who want fun snacks or lunches for their kids!

Grimm’s Fine Foods asked me to create something using their turkey pepperoni, and I wanted to do something unique. I have also been wanting to put salad rolls of some sort on my blog for a while now! I actually make salad rolls quite often, especially when I’m tasked with bringing an appetizer somewhere. They’re pretty easy to make, and always seem to be a hit with crowds.

My usual salad roll fillings consist of cilantro, shredded lettuce, baby shrimp, carrots and cabbage. I went with the fresh veggies for this recipe, but in keeping with the idea of a “meat and cheese” type of snack, I used dill pickles, cheddar cheese, cucumber, peppers and lettuce to go with the turkey pepperoni!

How do you make a salad roll?

Salad rolls are so easy! Whatever you decide to fill your rolls with, you want to make sure it’s all sliced very thinly. If using carrots, I would recommend fresh shredded carrots versus the bagged pre-cut matchstick carrots. I find those carrots to be too hard and pokey, and they’ll often break through the rice paper!

For the turkey pepperoni rolls, I cut each pepperoni in half lengthwise, then once more (4 long strips). Once you have all of your pepperoni cut and your other veggies washed and sliced, you will need a large shallow bowl filled with warm water for the rice paper.

Dip the rice paper, one at a time, in the warm water for about 5 seconds. Remove it, and place it on a flat surface or cutting board for 30 seconds to soften up.

Fill up the bottom third of the rice paper with your fillings. You don’t want to pile it up too much, but you also don’t want the rolls to be too thin. You’ll get a feel for how much to fill up the rolls once you get going!

Starting at the bottom, fold the bottom half of the softened rice paper over the filling and tuck it in. Grab the sides of the rice paper and fold those in as well, then continue rolling until the salad roll is all rolled up! Place it in a serving dish and continue with the next roll.

Can you make salad rolls ahead of time?

These rolls are best served right away, or at least a couple of hours after making them. If you want to make them the night or day before, you will have to wrap each roll individually in plastic wrap and store them in the refrigerator, to prevent the rice paper form drying out!

The rolls can be kept at room temperature, for about 4-5 hours, before serving. Perfect for keeping out during a kid’s party or play-date!

Now let’s talk about the dip!!

How do you make a honey mustard dipping sauce?

Hmm let’s think. What do you think goes into a honey mustard sauce? (Ok I think I’ve been talking to toddlers too much).

  • honey
  • mustard – I use Dijon mustard
  • a touch of vinegar
  • a pinch of cayenne (if your kids won’t freak out about it)

Mix it all together and you have yourself a made-from-scratch dipping sauce!

This dipping sauce is also perfect for chicken tenders or coconut shrimp – try it with my air fryer coconut shrimp some time!

They’re simple, fun and tasty! These turkey pepperoni salad rolls would make a unique lunch idea, appetizer or snack. Crunchy and delicious!

Don’t be intimidated by the rice paper, it’s crazy easy and you’ll be stuffing rice paper full of all sorts of things once you get going! 🙂

Description

Learn how to use rice paper to make fun toddler snacks! These turkey pepperoni salad rolls make a simple kids’ party food or lunchtime treat.

Ingredients

Scale
  • 1 package Grimm’s turkey pepperoni
  • 3 leafs romaine lettuce, washed and chopped finely
  • 2” thick piece of cheddar cheese, sliced into 1/4” sticks
  • 1/2 English cucumber, sliced into 1/4” sticks
  • 3 large pickles, sliced 1/4″ lengthwise
  • 1/2 large bell pepper, sliced into 1/4” slices, lengthwise
  • 78 round rice paper sheets

Honey Mustard Dipping Sauce

  • 2 tbsp liquid honey
  • 2 tbsp mayonnaise
  • 1/2 tsp vinegar
  • 2 tbsp Dijon mustard
  • optional: sprinkle cayenne

Instructions

  1. Take half of the pepperoni from the package, and slice each one in half, lengthwise, then in half again (4 long pieces in total).
  2. Fill a large, shallow bowl with warm water. Set up your work station: the rice paper, the warm water, then the veggies/pepperoni, all in a row. Start by taking one piece of rice paper and holding it in the warm water for 5 seconds. Remove it, shake off excess water and place it down on a flat surface, like a cutting board. Allow it to sit for about 15 seconds, then begin adding fillings to the bottom third of the rice paper. I went: sprinkle of romaine, followed by cheese, cucumber, pickles, bell pepper and then sausage.
  3. Grabbing the bottom of the rice paper, fold it tightly over the filling, tucking it in. Begin rolling, tucking in the sides as you go. Finish rolling it up and place it in a serving dish before repeating with the remaining rice paper/filling.
  4. Prepare the honey mustard dip. In a small bowl, whisk together the honey, mayo, vinegar and Dijon. If using, sprinkle the cayenne on top. Use immediately with the salad rolls or store in the fridge covered, for 3-4 days.

Salad rolls are best enjoyed immediately, but will also be fine at room temperature for 4-5 hours. If you’re making them ahead of time, wrap each roll individually in plastic wrap and store them in the refrigerator, in an airtight container. They’ll keep for 1-2 days.
