*Please note* this post was originally published in 2019. I’ve updated the text but the recipe remains the same.

Hi guys! First off, thank you SO much for all the love on my last post. I can’t believe it’s been 2 years. 2 years!!! Now let the new, delicious posts begin!

Who else is freezing their BUNS off?! We have been SO lucky this winter with warmer weather. I’ve been able to walk back to and from pre-school more often than I had anticipated, which is great. But alas, it has come to an end! At least for now. We had temperatures with a low of -32 C this weekend (that’s -25 F) for my friends down South. COLD, right?!

We mostly huddled inside with some cozy soups and hot chocolates, but the kids got more than a little stir-crazy. Please, sun, come back?

Along with the cozy soups, I may have had more than my fair share of this maple pecan butter. As in, I ate it by the spoonful. Hey, it’s healthy fats! Also, this maple pecan butter is SUGAR-FREE, making it keto-friendly and paleo-friendly! No sweeteners necessary, but feel free to add some to yours.

How do you make this maple pecan butter?

If you’re not excited enough already, I need to also mention how EASY this recipe is!! Woop! It goes like so: roast some pecans with coconut oil, then run them through the food processor with some pure maple extract, cinnamon and salt. Um, that’s it. Ta da! If you’re not worried about sugar, I recommend adding a few tablespoons of maple syrup to the coconut oil before roasting, and reducing the amount of extract you use. The real maple syrup is unbeatable!

The pecans should be roasted for 12-14 minutes in the oven at about 350 F. You want to let them cool down a bit, but be sure to run them through a food processor while they’re still warm. It really helps break them down into butter!

What do you serve maple pecan butter with?

This stuff is SO good you guys! I put it on toast and bagels and such, but my favorite way to eat it is in a bowl of warm oatmeal. It’s next level! That’s a thing people say, right?

Oh, it’s also good by the spoonful. As previously mentioned. 🙂

I think it would basically be good anywhere you might use peanut or almond butter.

Is this maple butter keto-friendly?

Yes! There are no extra sugars in this recipe, unless you would like to add some maple syrup to the nuts to make them extra sweet and delicious. Otherwise, this recipe is naturally low-carb! I can’t tell you the exact amount of carbs, unfortunately!

Whip up some of this maple pecan butter and stay warm my friends!!

Description

This sugar-free roasted maple pecan butter is not only keto and paleo friendly, it’s DELICIOUS and so, so easy to make! You’ll be eating it by the spoonful in under 20 minutes!

Ingredients

Scale
  • 3 cups raw, whole, unsalted pecans
  • 3 tbsp coconut oil, melted
  • 1 tsp pure maple extract
  • 1 tsp ground cinnamon
  • pinch of sea salt
  • optional: 1-2 tbsp pure maple syrup

Instructions

  1. Preheat the oven to 350 F and line a large baking sheet with parchment paper. Spread out the pecans. Drizzle the melted coconut oil (and maple syrup, if using) all over the pecans and massage it into the nuts with your hands. Roast the nuts for 12-14 minutes, until they brown and become aromatic. Be careful not to burn them! Remove from the oven and cool for 5 minutes.
  2. Place the still-warm nuts into the food processor, along with the maple extract and cinnamon. Process the nuts in the food processor on low until smooth and spreadable, about 5-7 minutes, depending on your machine. Scrape down the sides as needed. Taste, and add more maple extract, cinnamon or maple syrup as desired. Enjoy! Spread it on toast, mix it into your oatmeal or eat it right from the jar!

Maple pecan butter will store in an airtight container, at room temperature for a couple of weeks! If it gets hard, you can microwave it for 10 seconds to soften it up.

  1. There’s no way I could live in cold like that. I’d have to train Cookie to use a litter box and I promise that wouldn’t go well. This maple pecan butter, though. . .YUM! I made pecan butter by accident (a long story) a few months ago and became obsessed. The only thing that could make it better is maple!

    1. It’s absolutely terrible, Kelsie! I’m a big wimp about it. I hope you never have to experience training Cookie to use a litter box, haha! I’m curious about your accidental pecan butter – sounds like a pretty great accident! Thanks friend!

  2. Wow, I thought our -11 was bad 🙂 . I love pecans and this pecan butter sounds amazing and the touch of maple just makes it! Stay warm, take care.

    1. It’s brutal! We never leave the house, hah! Thanks Stacey – I hope your cold snap is over soon!!

  3. It’s freezing here too! We enjoyed a cozy weekend inside, but that’s going to get old real fast! At least I’m getting some quality time in the kitchen! Speaking of which, looks like you had some quality time making this maple pecan butter! It looks so delicious. I’d love some slathered on toast right now! Stay warm Katherine!

    1. Yes, you can only have so many cozy weekends inside before you get a little stir-crazy! I’m glad you got some good kitchen time in though. Thanks Leanne – it’s GREAT on toast!

  4. Pecans are my ultimate favorte Katherine! I love homemade nut butters. Can’t wait to try this!

  5. We’re supposed to get down to 11 degrees this weekend – so, yes….brrr!!

We love nut butter of all sorts and this one is really calling my name with the coconut, cinnamon and, of course, pecans!!

    1. Uugh so cold! I am not a winter person. At least I will appreciate summer more now? Thanks Marissa!! I think you’ll love it!

  6. Winter in Nova Scotia has been relatively mild so far. We’ve had a couple of very cold days (Up to – 25C), but nothing really harsh. We haven’t even had real snow yet – it’s either just a bit of it or rains…or the mix of snow and rains. This pecan butter looks and sounds amazing! I’d like this with a bagel…and with oatmeal…and over ice cream…and with crepes…and I’ll handle any leftovers with a spoon 🙂

    1. No real snow yet!? Ok, I’m moving to NS. I hate winter so much (I think everyone knows that by now). I’m dying here in the freezing cold!! Thanks Ben! I think you’d love it too – and I love your ideas for it!!

  7. We are in 30s this week and I’m finding it so cold:) Not sure how you guys are handling that deep freeze. Hopefully it will get warmer soon. But this maple pecan butter is so healthy and warming with the cinnamon, I can eat it right off the spoon. And I love the texture with a light crunch. So yummm. Stay warm Kathy:)

    1. I’m handling it like a big baby, Maria. Haha! I hope we get warmer SOON too!! Thanks! It’s SO good – it’s especially delicious warm, when it’s first whipped up. Mmmm!

  8. Oh my goodness it has been SO COLD HERE!!! Like in the 30’s….I know that’s not really that cold, but it’s cold for California haha. I am loving this Maple Pecan Butter Katherine! Maple is probably my favorite smell and flavor! I would put this on EVERYTHING 🙂

    1. That does sound cold, at least for California!! It seems most of North America is in some sort of deep freeze!! Brrr..! I’m with you Kelly! I LOVE maple so much. It is so good with pecans!!

  9. I love this so much! You could literally eat it with a spoon, but good on so many things! Pinning and Happy Friday Katherine! xo
