Well we had one of the first snowfalls of the year on Tuesday – this is very late in the season for us! It wasn’t a whole lot, but the kids (and dog) were still excited nonetheless. Oscar is supposed to start skiing lessons next week so for once I’m actually hoping for a bit more snow!

Anyway, this post lands with perfect timing as it is American Thanksgiving today! We already celebrated ours back in October, but the nice thing about being a food blogger that caters to both Canadian and American holidays is that I get to start the holiday foods early on and continue until January!

So, with all of the holidays in our near midst, I present to you this beautiful holiday charcuterie wreath!

What is a charcuterie wreath?

We are big fans of charcuterie around this place. Meats, cheeses, crackers, fruits, nuts, pickled things, what’s not to love?! This is basically THAT but in the form of a wreath, using fresh thyme and fresh rosemary to make it green like an actual wreath!

This wreath also has something special on top of the regular charcuterie goodies – turkey cheese balls! These delicious little balls are filled with cheese, shredded turkey meat, and oven baked with a crispy Panko coating.

How do you make turkey cheese balls?

Start these turkey balls by cooking the turkey breasts in a skillet on the stove. I always use my cast iron for this! You can use your favorite skillet as long as you have a lid that fits!

Once the breasts are cooked, shred them into small pieces and place the meat into a large mixing bowl. Add the salt and pepper, mozzarella, mayo, chili garlic sauce, and 1 egg. Stir everything to combine. Using your hands, take about 2 tablespoons of the mixture and roll it into a ball, like a meatball. Set the ball on to one of the prepared baking sheets and repeat with the remaining mixture.

After you’ve created the balls, set out 3 shallow bowls; one with flour, lightly beaten egg, and Panko breadcrumbs. One at a time, dip the balls in flour, then egg, then the Panko crumbs. Place these breaded balls on a baking sheet and bake for 15 minutes.

Add them to the holiday wreath and start arranging the rest of the charcuterie goodies!

What do you put on a holiday charcuterie wreath?

You can definitely mix this up with your favorites, but for this particular wreath we’ve got:

  • grape tomatoes
  • assorted olives
  • turkey deli meat
  • turkey pepperoni
  • bocconcini cheese
  • pickled artichokes

Arrange everything together on a large round surface. You can use a large cake stand, a round plate or charger, or a wood cutting board. If you don’t actually have anything round, you can also just create a round wreath on top of a square board!

Use your best judgement on where to place things, keeping it all evenly spaced. The rosemary and thyme can be added at the end, to finish off the wreath look.

No matter what the occasion this holiday, this charcuterie wreath is perfect for entertaining!

Ingredients

Turkey Breast Cheese Balls

  • 1 tbsp olive oil
  • 1 lb boneless, skinless turkey breasts
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup mozzarella cheese, shredded
  • 3 tbsp mayo
  • 1 tsp chili garlic sauce
  • 3 eggs, divided
  • 1/2 cup all-purpose flour
  • 2 cups Panko breadcrumbs

Wreath

  • 6 turkey pepperoni sticks, diced
  • 56 slices turkey deli meat, rolled uo
  • 1/2 cup grape tomatoes
  • 1/4 cup assorted olives
  • 1/4 cup pickled artichokes
  • 68 bocconcini slices
  • 1/4 cup pickled onions
  • 67 fresh rosemary sprigs
  • 34 sprigs fresh thyme
  • 2 cups assorted crackers

Instructions

  1. Prepare the turkey cheese balls. Add 1 tablespoon of olive oil to a large skillet over medium-high heat. Once oil is hot, add turkey breasts. Cover saucepan and cook turkey for 5 minutes before flipping turkey breasts to the other side, placing lid back on and cooking for an additional 6-7 minutes or until turkey is cooked through. Use a digital thermometer to ensure the turkey has reached a temperature of 165 F before removing the pan from heat. Place cooked turkey breasts on a cutting board and use two forks to shred meat into pieces.
  2. Preheat the oven to 400F and line 2 large baking sheets with parchment paper. In a large bowl, combine shredded turkey, salt and pepper, mozzarella, mayo, chili garlic sauce and 1 egg. Stir everything to combine. Using your hands, take about 2 tablespoons of the mixture and roll it into a ball, like a meatball. Set the ball on to one of the prepared baking sheets and repeat with remaining mixture. 
  3. Set down 3 shallow bowls. Fill 1 bowl with flour, another with remaining eggs, whisked lightly, and the last with Panko crumbs. Dip turkey balls by first rolling the ball in flour, then in whisked egg, then Panko crumbs. Place balls on the other prepared baking sheet. Place baking sheet in the oven and bake for 15 minutes. Remove tray from the oven and allow the cooked turkey balls to cool down before preparing the antipasto wreath.
  4. To prepare the wreath, arrange turkey cheese balls in a large circle on a cutting board or plate. Add diced turkey pepperoni, rolled up turkey meat, grape tomatoes, olives, artichokes, bocconcini slices, and pickled onions. Place fresh rosemary and thyme sprigs among the food to create a “wreath”. Serve with crackers and additional cheese, if desired. 

Antipasto wreath will keep at room temperature for 3-4 hours, after which it should be disassembled and placed in the fridge, in an airtight container.
