These 3 ingredient Hawaiian chicken skewers are easy and delicious! They’re full of flavor and perfect for a summer gathering!

Pineapple in savory dishes – love it or hate it? Promise, I won’t be offended if you hate it! But I LOVE it.

Teriyaki-style sheet pan meals, grilled teriyaki salmon bites…you name it! Plus this dish is even better knowing that it’s made with homemade teriyaki sauce. I’ve been making this teriyaki sauce steady pretty much every week lately, and keeping it in the fridge for random uses! It’s great on so many things, even just rice in a bowl!

Anyway, I digress. These Hawaiian chicken skewers are another addition to my famous 3-ingredient meals and they’re perfect for grilling season! I’ve tested them a few times in the past little while and they’re devoured every time.

How do you make these Hawaiian chicken skewers?

These are so easy! But first, decide if you’re going to make the teriyaki sauce yourself, or use a store-bought version. I HIGHLY recommend the homemade kind, but if you’re in a pinch, a store-bought version is perfect too!

So, if you’re making the homemade version, get that ready first to use as a marinade. You will then need to chop the boneless, skinless chicken thighs into large 1″ chunks and then stir it into the teriyaki sauce. Marinate the chicken for 2-3 hours before you’re ready to skewer and grill!

Using fresh pineapple, chop the fruit into equal sized 1″ chunks as well. If you’re using wooden skewers, be sure to soak them in water for at least 30 minutes before grilling.

When you’re ready to get things ready for dinner (about 20 minutes before), alternate the chicken and pineapple chunks on a skewer, in whatever combination you want!

Place the skewers on a hot, preheated grill and cook them for 3-4 minutes on each side, turning once. The chicken is cooked when it reaches an internal temperature of 165 F.

The skewers are DELICIOUS, but even better if you baste them with a little extra teriyaki sauce after cooking, then jazzing them up with a sprinkling of sesame seeds and even green onion!

These skewers are amazing on their own, but so good with some delicious side dishes, such as:

Do you have to use fresh pineapple for this recipe?

Fresh pineapple is just the best for these skewers, but you could definitely also use the large canned pineapple chunks, drained. You could also add on some extra veggies to the skewers such as red onion or red pepper!

Can you use an indoor grill for this recipe?

Yes! I have a Ninja Foodi that I love to use. I heat it to about 450 F for these skewers and it works great. You will still want to turn things once during the cooking time and be sure to keep an eye on the temperature of the chicken so as to avoid them drying out.

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 2 cups fresh pineapple (1″ chunks)
  • 1 cup teriyaki sauce
  • optional: crushed peanuts, green onions, sesame seeds for topping

Instructions

  1. About 2-3 hours before grilling, marinate the chicken. Dice the chicken into 1″ chunks and place them in a bowl with 3/4 cup teriyaki sauce. Cover the bowl and place it in the fridge.
  2. 30 minutes before grilling, soak the wooden skewers in water (if using). When ready to grill, prepare the skewers. Alternate pieces of pineapple and chunks of chicken on the soaked skewers. 
  3. Preheat the grill to high, then place the prepared skewers on the grill. Cook them for 3-4 minutes on each side, turning once, until the chicken is thoroughly cooked and reaches an internal temperature of 165 F. 
  4. Remove the skewers from the grill, then baste each one with the remaining teriyaki sauce. Serve immediately, topping with crushed peanuts, green onions and sesame seeds.

Leftovers can be stored in the fridge, in an airtight container, for up to 3 days.
