It hasn’t been THAT long since I’ve given you another 3 ingredient recipe, but definitely too long. I actually meant to share this one last week, before Thanksgiving, but MAN life has been busy. Throw in a few sicknesses and some canceled childcare and you’ve got yourself a time-strapped blogger on your hands.
Anyway, better late than never, right? Also, oven roasted potatoes are far from just a holiday side dish. You can (and should) make these babies all year round! We sure do.
Before I go too far down the ‘tater road, I need to tell you guys that we bought an espresso machine!!! You may remember from a few posts back that I was really working on convincing my hubby – and myself – that we should spend a large chunk of money on an automated machine. Well, the fancy machines are still off the table, but we did pick up a Delonghi that does not require a 30 page manual or degree in coffee engineering. It’s wonderful! Super simple but it does everything we want it to. Love!
OK, we can talk about potatoes again.
How do you make easy oven roasted potatoes?
All you need for this super simple recipe is:
- baby potatoes
- olive oil
- seasoning
- minced garlic
I love using the red potatoes, but any color will do! You can even buy the multi-colored pack of baby potatoes, which is always fun.
Other than the basic ingredients, you can jazz things up with some bacon bits at the end or some parmesan. I love to garnish them with a bit of fresh parsley, too and even a bit of melted butter!
This recipe will take you about 40 minutes from start to finish. Start by slicing the potatoes into quarters; try to keep the size of the pieces as even as possible. In a separate bowl, mix together the olive oil, minced garlic and seasoning. For the seasoning, I LOVE using Montreal steak spice – I use it on pretty much everything, including these oven baked chicken wings. If you don’t know what Montreal steak spice is or don’t have any, just use salt and pepper and whatever other seasoning you may want to throw in, like Cajun spice or a bit of rosemary.
Toss this mixture all together with the diced potatoes, then spread the potatoes out on a baking sheet.
Bake the potatoes at 400 F for 35 minutes; toss the potatoes about halfway through to ensure even baking and crispiness. Serve them immediately!
How long do these potatoes keep?
You can store these easy oven roasted potatoes in the fridge, in an airtight container, for 3 to 4 days. You may want to heat them on a baking tray at 275 F to crisp them up a bit, for about 15 minutes.
What can you serve oven roasted potatoes with?
Honestly, when recipe testing these, I ate my weight in roasted potatoes on their own, in the middle of the afternoon. The kids loved them too….so maybe they’re great just on their own as a snack!? Seriously, with a little bit of melted butter over the top – they are AMAZING! So crispy on the outside and soft on the outside. Like grown-up French fries!
But – if you’re serving them as a side dish, they’re great with grilled steak or chicken, or fish. Try them with my maple Dijon salmon!
We might have passed Canadian Thanksgiving, but the American one is still coming up and we have so many other reasons to celebrate and feast! These easy oven roasted potatoes will be one of your new favorite go-to side dishes (or afternoon snacks).

Ingredients
- 2 lbs baby potatoes, any color
- 2 tbsp olive oil
- 1 tsp seasoning*
- 4 cloves garlic, minced
- optional: parsley, bacon bits, parmesan, melted butter
Instructions
- Preheat the oven to 400 F. Slice the baby potatoes into quarters, trying to keep the sizes as equal as possible. In a small bowl, combine the olive oil, seasoning and minced garlic. Toss the potatoes with the mixture and spread them out evenly on a baking sheet. Roast the potatoes for 15-20 minutes before tossing the potatoes with a spatula, then roasting for another 15 minutes or until the potatoes are crispy on the outside and fork-tender.
- Remove the potatoes from the oven and serve, OR garnish with bacon bits, chopped parsley and parmesan. You can also drizzle a bit of melted butter on for extra decadence!
Leftover potatoes can be stored in an airtight container, in the fridge, for 3-4 days. Reheat in the oven at 275 F for about 15 minutes.

*I love using Montreal steak spice as my seasoning but feel free to swap it for just salt and pepper, a touch of rosemary, or a Cajun spice mix.

I seriously love potatoes. So much that I will eat them raw with a little salt sprinkled on top hahaha. But these roasted ones sound so quick and easy! I will definitely have to try. These just remind me of childhood….nothing better than that!
