Easy Oven Roasted Potatoes

Description

One of the best side dishes you’ll make, these easy oven roasted potatoes are only 3 ingredients and SO good! Crispy oven roasted potatoes for the win!


Ingredients

Scale
  • 2 lbs baby potatoes, any color
  • 2 tbsp olive oil
  • 1 tsp seasoning*
  • 4 cloves garlic, minced
  • optional: parsley, bacon bits, parmesan, melted butter

Instructions

  1. Preheat the oven to 400 F. Slice the baby potatoes into quarters, trying to keep the sizes as equal as possible. In a small bowl, combine the olive oil, seasoning and minced garlic. Toss the potatoes with the mixture and spread them out evenly on a baking sheet. Roast the potatoes for 15-20 minutes before tossing the potatoes with a spatula, then roasting for another 15 minutes or until the potatoes are crispy on the outside and fork-tender.
  2. Remove the potatoes from the oven and serve, OR garnish with bacon bits, chopped parsley and parmesan. You can also drizzle a bit of melted butter on for extra decadence!

Leftover potatoes can be stored in an airtight container, in the fridge, for 3-4 days. Reheat in the oven at 275 F for about 15 minutes.

Notes

*I love using Montreal steak spice as my seasoning but feel free to swap it for just salt and pepper, a touch of rosemary, or a Cajun spice mix.
