Welcome to my newest camping obsession – s’moreos! These ooey-gooey marshmallow stuffed Oreo cookies are seriously so good. We actually started eating them a few months ago, inside the house, using the broiler! But now that it’s camping season we’re ALL about the s’moreos around the fire!

Speaking of camping, this weekend we took a break from it and spent some local time around here. Wally turned 5 yesterday so we had a little celebration for him here! The weather was fantastic so we went to the lake with some friends and had some cake. By the lake. Ha! (See what I did there).

Anyway, they didn’t allow us to have a fire, but we definitely packed some of these s’moreos. Did I mention they’re delicious even after you’ve made them?

What do you need to make s’moreos?

You only need 3 delicious ingredients for these Oreo s’mores!

  • marshmallows
  • Oreo cookies
  • chocolate chips

I use double stuff Oreos because I like the extra icing with these chocolate sandwiches. I also tried these initially with a square of milk chocolate, but I decided I like the semi-sweet much better! If you’re a big fan of milk chocolate, you can definitely do it that way too!

How do you make these Oreo s’mores?

We’ll walk through the broiler/oven method vs the camping method, but I’ll touch on that later!

To make these in the oven, first line a baking sheet with parchment paper and separate 10 Oreos, keeping the icing as intact as possible. Place 3 chocolate chips on top of the icing side, followed by a marshmallow. Add 5 chocolate chips to the un-iced Oreo half.

Place the whole tray in the oven and broil on low for about 4-5 minutes, or until the marshmallows are golden and puffy. Keep an eye on them as they burn quickly!

The marshmallows may puff up huge initially, but they’ll shrink down after a minute or two outside of the oven. Use a spoon or knife to spread the melted chocolate around a little on the other side of the Oreo.

Sandwich the two halves together, and enjoy!

What size marshmallow do you use for s’moreos?

Use a regular sized marshmallow, not the jumbo. They’ll be way too big! You can also cut a regular size marshmallow in half if you want to make sure the s’moreos are neat and tidy and not oozing out too much!

Can you make this recipe over the campfire?

Yes, definitely! On a separate serving surface, arrange the Oreos as instructed with the chocolate chips on only the unfrosted half of the open Oreos, then roast the marshmallows over an open flame until roasted and delicious. Place the roasted marshmallow on top of the side with chocolate chips, then place the frosting side on top.

Can you use this method for other types of sandwich cookies?

Yes, definitely! I bet this would be delicious with flavored Oreos (mmm maybe mint?) or other chocolate sandwich cookies.

Ingredients

Scale
  • 10 double-stuff Oreos (or regular Oreos)
  • 1/4 cup chocolate chips
  • 10 regular-sized marshmallows*

Instructions

  1. Separate the Oreos in half, keeping the icing on one side as much as possible. Lay out the open Oreos on a parchment-lined baking sheet. Add about 3 chocolate chips on the frosted side, and about 5 chocolate chips on the un-frosted side. Add a marshmallow on top of each of the frosted side.
  2. Place the baking tray under the broiler in the oven turned to low. Broil for 4-5 minutes or until the marshmallows are golden and toasty and the chocolate chips are melted. Remove the tray from the oven and place the two halves together. Serve immediately!

If you don’t finish the s’moreos while warm, you can save them for later. Keep them at room temperature in an airtight container for up to 3 days.

Notes

*If the marshmallows seem way too big for the Oreos, cut them in half. A giant oozy marshmallow is delicious but it won’t be as pretty!

**Try placing the marshmallows vertically on top of the Oreo half instead of horizontally to have it fit nicer on the small cookie.
