Kick things up a notch with this chocolate Bailey’s milkshake! Sweet and refreshing, this boozy milkshake is a great little treat!
It wouldn’t be the week of St. Patrick’s Day without a little Bailey’s, right!?
While I’m usually a Bailey’s in my coffee kind of girl, a little Bailey’s Irish cream in a chocolate milkshake is pretty darn good too. PERFECT on a warm spring day, let me tell you. We enjoyed these out on the deck in the sun after I took these photos! Although they made me a little sleepy, they were a pretty amazing afternoon treat. We had to make a couple of virgin milkshakes for the kids, of course. No way we’d get away with one of these in front of them without sharing, ha!
Speaking of sun, it was a BEAUTIFUL weekend. We traded our skiis for bikes and I’m not looking back, let me tell you! One of the only downsides to spring, however, is the muck. Sooo mucky. And now we’ve got a giant furball full of muck too!

What’s in a Bailey’s milkshake?
There are only 3 ingredients (you saw that coming) in this recipe:
- chocolate ice cream
- Bailey’s liqueur
- chocolate liqueur
I also add a full cup of ice to the shake to get it extra frosty, but I don’t count water as an ingredient; although, someone on Pinterest left me a snarky comment the other day that I should be!
For the chocolate liqueur, I like to use a clear cocoa liqueur. I usually buy McGuiness crème de cacao but this time I used this cacao white by Bols. They’re pretty interchangeable!
I use original Bailey’s Irish cream for this recipe, but they have some fun flavors out now that might also be great!
How do you make a chocolate Bailey’s milkshake?
This boozy shake can be yours in 5 minutes! It’s one of the best parts of this recipe. In a high powered blender, add 3-4 cups of chocolate ice cream, along with a cup of ice and the chocolate liqueur and Bailey’s Irish cream.
Add everything together and blend on high until smooth.
This recipe makes enough for 2 fairly large milkshakes. Lucky you if you actually have a milkshake glass like these ones – aren’t they so cute?! I like to top these shakes off with a bit of whipped cream, and of course a cherry on top!
I recently discovered cocktail cherries again and they’re going on everything these days. The kids love them! I digress…..
What do you do with leftover milkshake?
You can also turn this chocolate Bailey’s milkshake into boozy popsicles! If you have too much milkshake or you just want a boozy pop for later, pour the milkshake into popsicle molds and freeze for 4-5 hours. They’re so good! Just no cherry on top!

Description

Ingredients
- 3 cups chocolate ice cream
- 1/2 cup chocolate liqueur*
- 1/2 cup Bailey’s Irish cream
- 1 cup of ice
Instructions
- Add all of the ingredients to a high-powered blender and blend on high until thick and frothy**. Pour the shakes into 2 glasses and top with whipped cream and a cherry on top!
Notes
*Use any chocolate liqueur, clear or otherwise, or crème de cacao.
**If it’s not thick enough, add more ice or more ice cream.

This milkshake looks and sounds splendid! What I really love that you didn’t mess up with it by diluting with milk (We don’t count those ice cubes!) I’ve seen many recipes (roughly for the same amount you have here) that call for ice cream, milk (~1 cup), and just 1-3 tablespoons of liquor. Nonsense! Crime against humanity! You made a PERFECT, thick milkshake, just with a proper ratio of ice cream to liquors. I approve. Probably, even Daisy approves. Cheers!
