Guys, our house has been on a sugar overload since mid-November. First it was a few Christmas cookies, then we celebrated Etienne’s birthday, then it was my birthday, and now I’m in full Christmas baking mode! And no-baking, if you count those 3 ingredient Oreo truffles from last week, and this week’s easy peppermint white chocolate mousse!

We DEVOURED this one. It is so simple and so luscious! 

Trust me, I was in desperate need of a delicious dessert this weekend. I was having issues with the blog ALL WEEKEND. I have to say that website problems are my least favorite part of this gig. I wish I was more technical at times! But fingers crossed, it all seems to have worked itself out.

Oh, and even though I had reported we were having weather that was WAY warmer than average, we woke up to a big dump of snow this morning! Seriously, we went from  being able to ride our bikes to school to the next morning throwing all of our snow gear on. Only in Canada!

So many reasons for mousse.

How do you make peppermint white chocolate mousse?

For this easy 3 ingredient mousse you’ll need:

  • good quality white chocolate
  • heavy cream
  • peppermint extract
  • optional: crushed peppermint candy canes

Start the recipe by creating a white chocolate ganache. Place the white chocolate in a heat-proof mixing bowl and cover it with heavy cream that has been warmed on the stove until steaming, but not boiling. Let it sit for a while before stirring into a smooth ganache.

Add in additional heavy cream along with some peppermint extract and whisk it all to combine. 

Refrigerate the mixture for at least 4 hours or until very, very chilled. I actually left mine in the fridge for 2 full days before whipping it up and turning it into mousse (but this is just because it took me that long to get around to it)!

When you’re ready to make the mousse, use a stand mixer fitted with the whisk attachment or a handheld electric mixer to whip it up into a sweet and fluffy mousse!

Spoon the mousse into individual sized glasses or dessert cups, alternating spoonfuls with crushed candy cane (if desired). Place the mousse back into the fridge for 2 hours to properly chill again before serving. Top with additional whipped cream and candy cane!!

I divided the mousse into 6 servings. They’re on the smaller side, but the dessert is fairly sweet so it’s just the right amount!

How long does peppermint white chocolate mousse last?

Once whipped, the mousse will last 2-3 days in the fridge. Do not add the additional whipped cream on top until you’re ready to serve, or it will start to break down. 

Can you use milk or dark chocolate for the mousse?

Yes! This recipe is just as delicious with dark chocolate as it is with white chocolate. The entire recipe will remain the same! I just happen to love white chocolate!!

Ingredients

Scale
  • 2 cups heavy cream (30-35%)
  • 10 oz pure white chocolate, chopped
  • 1 tsp pure peppermint extract
  • optional: crushed candy canes, for decorating

Instructions

  1. In a small saucepan over medium-high heat on the stove, warm 1 cup of the heavy cream until beginning to steam, but before it begins to boil.
  2. Place the white chocolate in a large heat-proof bowl. Once the cream has heated up, pour the cream over the white chocolate and allow it to sit for a couple of minutes before stirring into a smooth ganache. Add the remaining cup of cream as well as the peppermint extract and whisk to combine. Place the mixture in the fridge, covered, for at least 4 hours, or up to 3 days.
  3. When ready to make the mousse, pour the mixture into the bowl of a stand mixer fitted with the whisk attachment, or into a bowl for use with a handheld electric mixer. Mix on high until stiff peaks begin to form.
  4. Portion the mousse into individual serving glasses (I used 6). Layer and top with crushed candy canes, if desired. Place the mousse back into the fridge for 1-2 hours prior to serving. Top with additional whipped cream or candy cane just before serving (optional).

Leftover mousse can be stored in the fridge, covered for 2-3 days.
