GUESS WHAT!? We leave to go to Hawaii tomorrow!! Maui is my favorite place on earth. The warm island air, the smell of the ocean, the palm trees, the warm sandy beach underneath my feet…aaah it’s the best!
We haven’t been since Oscar was the same age that Hattie is now. I distinctly remember Oscar running around on the beach one evening, buck naked and squealing as the waves hit his feet. He loved it, and I can’t wait to see what he thinks of it now!
Anyway, this one pan sausage and veggies was born out of a need to use up some garlic sausage that I had in the fridge and to satisfy the desire for a quick and healthy meal!
It doesn’t get any easier than this! My favourite kind of dishes are the ones that you can just throw together, toss it into the oven and sit back and relax with a glass of vino.
What kind of vegetables can you use for this one pan sausage and veggies?
Other than the fact that it’s quick and easy, the other good news about this dish is that it’s TOTALLY customizable. You can use whatever vegetables you have on hand, or prefer. We pretty much always have sweet potatoes and peppers on hand, so I always throw those in. There’s something so delicious about roasted broccoli and cauliflower, too.
You could use beets, carrots, brussels sprouts or even asparagus. Seriously, whatever tickles your fancy!
This dinner is also a great way to clear out the fridge of random vegetables you have sitting around.
What kind of spice mix can you use?
We used a Cajun spice mix (this one). You could absolutely use whichever mix you think sounds good with sausage and veggies! Try a creole or tex-mex blend or even just a mix of paprika, cumin and chili powder!
How long do you cook this one pan dinner for?
Once you’ve got everything chopped assembled, lay it all out on a baking sheet lined with either parchment paper or aluminum foil. The nice thing about putting everything on top of foil is that it makes clean-up WAY easier! Just gather up the foil after dinner and voila – dishes done!
The dinner cooks for 30 minutes. You’ll want to stir everything around after the first 20 minutes, for even roasting. I usually rotate my pan too at this time.
The sheet pan sits nicely in the oven at “keep warm” if you’ve got other things to get ready for dinner.
What do you serve this dish with?
We’ve had this twice now, and the first time I served it with rice, but the second time we actually just ate it on its own! It’s hearty enough that you don’t really need a starch. If you do need something to go with it, I would recommend something like rice or quinoa for the base. I’ve got a few tasty rice dishes on the blog that would work really well with this:
The sweet coconut rice would be an awesome contrast to the slightly spicy veggie mix!

One Pan Sausage and Veggies

Description
This one pan sausage and veggies dinner is the EASIEST meal you will ever make! Bright, flavorful and colorful vegetables with a simple spice mix roast up beautifully with some sliced garlic sausage!
Ingredients
- 1 lb pre-cooked garlic or smoked sausage*, sliced into 1/2” pieces
- 1 large bell pepper, sliced into large chunks
- 2 cups peeled sweet potatoes**, sliced into 1” cubes
- 1 cup broccoli florets
- 1 cup cauliflower florets
- handful of baby corns
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1 tbsp Cajun seasonings***
- salt and pepper, to taste
- optional: rice, quinoa for serving
Instructions
- Preheat the oven to 400 F and line a large baking sheet with aluminum foil. In a large mixing bowl, combine the sausage and all of the veggies.
- In a small bowl, whisk together the oil and seasoning. Pour this mixture all over the mixing bowl of veggies and use a large spoon to toss and coat everything. Pour the bowl of veggies and sausage out on to the lined baking sheet and spread everything out. Season with salt and pepper. Place the pan in the oven for 20 minutes, then stir everything around before cooking for another 10 minutes. Serve immediately, over rice, quinoa, or on it’s own!
Leftovers can be stored in an airtight container in the fridge, for 2-3 days.

*You can pretty much use any pre-cooked sausage you’d like (turkey, chicken, honey garlic pork sausage)
**In the pictures in this post I actually used butternut squash instead of sweet potatoes. I’ve tried it with both!
***We love the Cajun spice flavor but you can use whatever spice mix you’d like. Try taco seasoning or a Greek spice mix!
