This no-bake chocolate coconut balls recipe is made in 1 bowl, with 5 ingredients and in under 10 minutes! Talk about a win. These easy energy bites with no added sugar will be your new favourite snack, dessert or midday pick-me-up!

Once upon a time, there was a food blogger who threw some of her favorite ingredients into her food processor, blended it up, rolled it into balls, and dipped it in chocolate. And thus, the greatest snack balls ever were born. The End.

I’m told I should consider writing children’s stories. What do you think? 🤣

Actually, Etienne and I take turns telling the boys a “story” every night after we tuck them into bed. It is a great exercise in using your imagination! It is really hard to come up with a new story every other night. I usually start with “once upon a time there were….” and then end with “and that’s why you don’t talk to strangers”. Let’s just say the boys definitely prefer Etienne’s stories. Ha!

So, as pathetic as my opening story was for these chocolate coconut balls, it’s a true one! I just experimented one day. I absolutely love making easy snack balls in the food processor, and although I often gravitate towards medjool dates as my binder, I wanted to try something with less sugar. I tried peanut butter – it’s sticky, right!? It worked well!

I kept the ingredients super simple. Coconut, coconut oil, peanut butter, a dash of vanilla and some salt. No sugar! And you know what? They’re so good. Even without the “optional” chocolate coating!

Coat them in sugar-free chocolate or super dark chocolate (at least 85%) to make these balls keto and paleo friendly. I happen to like super dark chocolate so I use it even though I’m not personally on any type of special diet. My favourite is the Lindt 90% bars.

How do you make no bake chocolate coconut balls?

The easiest energy bites recipe ever. Into your food processor, combine the coconut, coconut oil, peanut butter, vanilla and salt. Pulse until a sticky mixture is formed. Shape the mixture into balls, either using a cookie scoop or with your hands. Refrigerate for 20 minutes before dipping in melted chocolate, and then rolling into whatever topping you like. I love using coconut and crushed peanuts!

Do energy balls need to be refrigerated?

Short answer, yes. They will keep much longer in the fridge, about 7-10 days. You could store them at room temperature, but they will soften up!

No Bake Chocolate Coconut Snack Balls

Description

These no-bake chocolate coconut balls are made in 1 bowl, with 5 ingredients and in under 20 minutes! Dip them in chocolate for a special treat or eat them the way they are. These easy energy bites with no added sugar will be your new favourite snack!


Ingredients

Scale
  • 2 cups shredded coconut, unsweetened (medium)
  • 1/4 cup coconut oil, solid
  • 1/2 cup peanut butter, natural
  • 1 tsp pure vanilla extract
  • 1/4 tsp salt

Optional

  • 3 oz dark chocolate, chopped*
  • 1 tbsp coconut oil
  • 1/4 cup shredded coconut, unsweetened (medium)
  • 1/4 cup finely chopped peanuts

Instructions

  1. Add the coconut, coconut oil, and peanut butter to a food processor and pulse a few times to incorporate all of the ingredients. Add the vanilla and salt and pule a few more times until a sticky “dough” is formed.
  2. Place the food processor in the fridge for 10 minutes to firm up the mixture. Place a piece of parchment paper on a baking sheet. Using about 1 tbsp at a time, roll the mixture into evenly sized balls and place them on the baking sheet. Keep the balls in the refrigerator to firm up, and store, or before dipping in chocolate.
  3. Optional: In a glass measuring cup, melt the chocolate with the coconut oil in the microwave on high, in 30 second increments until smooth. Use a fork or dipping spoon to dip the balls in chocolate, shaking off the excess, and placing back onto the parchment paper until the chocolate is set. Alternatively, after dipping, roll the ball in shredded coconut or chopped peanuts.

Notes

  1. You can use any dark chocolate, or sugar-free chocolate to keep this recipe keto and paleo friendly. I like to use 90% dark chocolate!

  8. Wow 90% dark chocolate! You’re brave. I’m a sissy as I prefer milk chocolate 😀 I love this kind of treat. Have you ever heard about Swedish chocolate balls? They’re butter and oat based and they’re huge here in Sweden. I’m not the biggest fan but when I made my own with freeze-dried raspberries I was quite happy with the result. You should look into those if you want more inspo for this kind of snack.






    1. Hah, Eva! I’ve slowly worked my way up to 90%. I started with 72%. Now I even like 99%!! I have never heard of Swedish chocolate balls but I’ve got to look into it!! Anything bite sized, and especially if they’ve got butter, is my kind of treat 😉
