Hi from Vegas!

Yep, Vegas. If you follow me on Instagram (which you totally should, btw), you would know that Etienne and I booked a last-minute trip on Sunday, leaving Monday. We were depressed by the week of rain ahead of us and then the seat sale magically appeared in front of us. Badaboom, badabing! Except for all of the messy flying-with-a-baby-in-the-middle-of-her-nap stuff. But that’s neither here nor there 😉

Anyway, I’ll keep it short and sweet, since I have vacationing to do. You understand, right?! But I really wanted to get these healthy raspberry coconut popsicles out to you guys before Canada Day, since I totally created them for Canada Day. Red and white, right!?

I have made SO many popsicles the past few weeks in the name of taste-testing for you guys, my freezer is seriously full of nothing but popsicles. Luckily, they’re pretty healthy, and the kids sure don’t complain when I give them a pop as a morning snack!

How do you make healthy raspberry coconut popsicles?

I’m glad you asked, since I’ve done all the hard work for you! The mixture is super simple. All you’ll need is 2 cans of full fat coconut milk, 1 cup of frozen raspberries, honey, and a touch of vanilla. I definitely recommend using full fat coconut milk. It’s creamier, and more flavourful. I tried these with light coconut milk and the white part was just too watery for my liking.

If you want to do the nice red and white layers, you’ll have to freeze each layer for about 30 minutes in between so the colors don’t mix. If you don’t have that kind of patience, you could just do the top red and the bottom white, or vice versa (with only 1 wait time in between).

So, gather all of your ingredients, except the raspberries, throw them into the blender, remove half, add the raspberries, blend again, and pour into your popsicle molds! I use these molds and it makes 10.

How long do you freeze popsicles for?

I recommend freezing the popsicles (once they’re totally filled) for at least 4-5 hours before trying to remove them from the mold. OH – and one last tip. If you’re making the layered pops like these ones, be sure to stick the sticks in after the third fill (freeze them for about 15 minutes first). If you wait until the last fill, the sticks won’t go in very far! This may or may not have happened to me a few times 😉

Description

Take a bite out of these refreshing healthy raspberry coconut popsicles! These coconut milk popsicles are naturally sweetened, with no refined sugars!


Ingredients

Scale
  • 2 cans full-fat coconut milk* (400mL each)
  • 1/4 cup honey (sub maple syrup or agave syrup)
  • 1 tsp vanilla extract
  • 1 1/2 cups frozen raspberries**

Instructions

  1. In a blender or food processor, combine both cans of coconut milk, the honey, and vanilla extract. Blend on high for 15 seconds to combine. Remove half (400mL) of the mixture to a measuring cup, or divide amongst the popsicle molds*** and freeze for at least 30 minutes before adding the red layer.
  2. Add the frozen raspberries to the remaining coconut milk mixture in the blender and blend on high until thoroughly combined. Once the white part is frozen (I touch it with my finger to test), add either half of the red mixture to the molds, and freeze again, or add all of it and insert the popsicle sticks, before freezing again (see notes).
  3. Freeze for at least 5-6 hours before running hot water over your molds and removing the popsicles. Enjoy immediately, or freeze in a large resealable bag for later!

Popsicles can be kept in the freezer bag for about 2 weeks, although I’ll doubt they’ll last that long!

Notes

*I HIGHLY recommend full fat coconut milk vs the light. I tried the light and the white part of the popsicle was just too watery!

**You can also use fresh, but I recommend frozen!

***For the layers as shown in my pictures, you should first pour 200 mL into the molds, then freeze for at least 30 minutes for continuing with 200 mL of the raspberry, and continuing on. Be sure to add your popsicle sticks to the popsicles at either the addition of your third layer, or if you’re doing just 2 layers, during the addition of the second layer.

  4. Happy Canada Day! I’m going to make some of these for our family’s 4th of July BBQ. I’m so glad I found your blog. Last summer our small extended family (2 grandparents, 2 parents, 2 grandkids) visited the Vancouver area and while in Burnaby had Tiger Tail Ice Cream. I’ve been meaning to find a recipe because can’t find the actual ice cream anywhere in California. Your recipe looks great and I’m going to make that too as a surprise. Tiger tail ice cream may look like Halloween to some folks but to me it says JULY!!
