My next guest needs no introduction….. 🙂 

Anyone get that reference? Or am I the only one who works while sitting in front of Netflix? I’ve been watching “My Next Guest” with David Letterman lately and I highly recommend it! It’s like an in-depth talk show slash documentary and I find it very interesting. The episode with Obama was terrific!

Anyway, this week’s 3-ingredient recipe are these STUFFED bacon wrapped dates. I have to admit to you, I “stole” the recipe idea from Wally’s little monthly recipe kit; it’s called Raddish Kids and it’s a subscription service that gets kids in the kitchen. There are not enough good things I can say about it! This is not sponsored in any way, I’m just a big fan. Wally has always liked helping me in the kitchen and seeing his proud little face when he makes his “own” recipe is just the best.

SO – the original recipe from his box was just bacon wrapped dates, and they were sooo good that I knew I had to throw them up on the blog. I amped up their recipe a bit by stuffing the dates with goat cheese. So good!

How do you make bacon wrapped stuffed dates?

As you may have already guessed, you only need 3 ingredients for this super simple recipe:

  • dates 
  • goat cheese
  • bacon

I highly recommend using Medjool dates because I find them sooo soft and delicious, and they already come with a nice little cavity for to stuff some cheese into. As for the goat cheese, if you’re not a fan, you could sub with cream cheese or another soft, spreadable cheese. 

I also recommend using thin bacon vs the thicker, applewood smoked bacon slices, The thin bacon wraps much easier and cooks quicker!

Start by placing the dates on a parchment or aluminum foil lined baking sheet. You don’t REALLY need the parchment/foil but the bacon and cheese makes a mess so lining the sheet first will help with cleanup!

Take a paring knife and slice the dates lengthwise. Remove the pit and then use a small spoon to stuff a teaspoon or so of goat cheese inside, packing it in firmly. Repeat with all of the dates!

After the dates are all stuffed, slice the bacon strips in half and wrap each slice around a date, securing it with a toothpick.

Bake the dates for 25 minutes, turning them halfway using tongs. You want to bake them until the bacon is nice and browned and crispy, so if you need to rotate and bake them a little longer, do it!

Remove the dates from the oven and allow them to cool for 5 minutes before serving – do NOT eat them immediately. PLEASE! Take my advice. I burned my tongue so bad because I just can’t help myself with things straight from the oven!

How long do bacon wrapped stuffed dates keep?

The dates are sooo good when they’re warm from the oven, but once they cool down they’re totally fine to keep at room temperature for the day. I would stick them in the fridge after 12-14 hours (they’re also good cold)! 

Since the holidays are upon us and we’ll all need some quick and easy appetizers, keep these bacon wrapped dates in mind! My only advice is don’t eat tooo many. I was so excited about these I definitely overate them and gave myself a stomach-ache! Ha!

Ingredients

  • 12 Medjool dates
  • 2 oz plain goat cheese*
  • 6 strips bacon

Instructions

  1. Preheat the oven to 400 F and line a small baking sheet with parchment paper or aluminum foil. Place the dates on the baking sheet, and using a small paring knife, cut a slit lengthwise on the dates and remove the pit.
  2. Use a small spoon to scoop a teaspoon of goat cheese into the cavity of each date, packing it fairly firmly into the date.
  3. Cut the bacon strips in half, then wrap a piece of bacon around each date and secure it with a toothpick. Bake the dates for 25 minutes, turning them halfway through, using tongs. Bake until the bacon is brown and crispy on all sides. Remove from the oven and allow the dates to cool for 5 minutes before serving.

Dates are best served warm, but can be kept at room temperature for 12-14 hours. Leftovers can be stored in an airtight container for 3-4 days.

Notes

*If you’re not a fan of goat cheese you can substitute for cream cheese or another spreadable cheese.

  1. Bacon / Prosciutto wrapped dates are everything you need in a delicious (and festive) appetizer – sweet & salty and irresistibly delicious. I’m usually lazy to staff them, but goat cheese is a great option (sometimes I drizzle with honey). I also make the same with prunes, but not many people love them 🙂






    1. I completely agree, they’re all you need and they’re SO easy – stuffed or not. I would try your prunes!! We go through a ton of prunes in this house!!
