Fall always sneaks up on me, especially the whole back to school thing! I know a lot of parents are looking forward to having that regular routine and kid-free time back, and while I can definitely understand this, I have to say I’m not ready for them to go back! The days have been busy and loud with them around, but we’ve all been having a lot of fun and I am not ready to have a quiet house again. Summer goes too fast!

Anyway, with back to school, I’m definitely in need of easy 30 minute meals that I can get on the table on a busy weeknight. This turkey burrito skillet is made with lean ground turkey and healthy vegetables, and it will definitely warm your belly on a chilly fall day!

What is a burrito skillet?

If you think of a traditional burrito, you would think of a large flour tortilla wrapped with rice, meat, beans, jalapeños, cheese and other goodies! Usually there is sour cream or guacamole in the mix as well. A burrito in a skillet is basically all of the same things, but without the flour tortilla and all warmed up together in a large skillet. It makes for a really hearty meal!

For this turkey burrito skillet, we’re combining all of the traditional delicious ingredients, but using lean ground turkey instead. Turkey is a great choice for your weeknight meals. It’s high in protein and low in fat and can be used in so many different meals!

What ingredients do you need for this turkey burrito skillet?

One other nice bonus to this dish is the fact that you only need super simple ingredients! For this one-pan dish you’ll need the following:

  • lean ground turkey
  • olive oil
  • yellow onion
  • green pepper
  • black beans
  • taco seasoning
  • rice
  • diced tomatoes
  • vegetable broth
  • salt
  • cheddar cheese
  • green onions

For a bit of a spicier burrito dish, you could also include diced jalapeños along with the chopped green peppers. Since my kids are very opposed to any amount of spice, we usually skip the spicy peppers!

How do you make this one pan burrito meal?

Start preparing your dish about 30-40 minutes before you’re ready to sit down and eat.

  1. In a large skillet over medium heat on the stove, heat up the olive oil for 1 minute before adding the diced onions and green peppers. You could also add in the jalapeños now, if you’re using them. Cook everything’s stirring with a large wooden spoon, for 4-5 minutes until the vegetables start to soften up.
  2. Next, add the ground turkey and continue to cook for 6-7 minutes or until the turkey looks mostly browned. Break up the turkey into smaller pieces as much as possible while you’re cooking, continuing to stir repeatedly. Add in the drained black beans, followed by the taco seasoning, and rice, and stir everything to combine.
  3. Pour in the diced tomatoes and vegetable broth and add the salt. Stir to combine. Turn the heat to high until the mixture starts to boil, then turn it down to low and place the lid on the skillet, simmering for 10-12 minutes.
  4. Remove the lid from the skillet, and give everything a stir. Check the rice, and if its cooked, remove the skillet from heat. If it’s still crunchy, place the lid back on and simmer for another few minutes. If the mixture looks too dry, add a bit more vegetable broth.
  5. Once removed from heat, add in the cheddar cheese and stir to combine. Top the skillet with green onions and serve immediately!

How well do leftovers keep?

This turkey burrito skillet is PERFECT as leftovers! You can even make a double batch of this dinner, and keep one batch in the freezer to heat up for another day. Any leftovers should be cooled to room temperature, and then kept in an airtight container and stored in the fridge for 3-4 days or in the freezer for up to 2 months.

To cook from frozen, thaw the meal overnight in the fridge and then heat up in a skillet over medium heat or in the microwave.

Ingredients

  • 1 tbsp olive oil
  • 1/2 cup diced yellow onion
  • 1 cup diced green pepper
  • 1 lb lean ground turkey
  • 1 can (14oz) black beans, rinsed and drained
  • 2 tbsp taco seasoning
  • 1/2 cup dry rice
  • 1 can (14oz) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 tsp salt
  • 1 1/2 cups shredded cheddar cheese
  • 2 green onions, diced

Instructions

  1. In a large skillet over medium heat on the stove, heat up the olive oil for 1 minute before adding the diced onions and green peppers. Cook for 4-5 minutes until the vegetables start to soften up.
  2. Add the ground turkey and continue to cook for 6-7 minutes or until the turkey looks mostly browned. Use a spatula or wooden spoon to break up the meat into smaller pieces. 
  3. Next, add in the drained black beans, followed by the taco seasoning, and rice, and stir everything to combine. Pour in the diced tomatoes and vegetable broth and add the salt. Stir to combine. Turn the heat to high until the mixture starts to boil, then turn it down to low and place the lid on the skillet, simmering for 10-12 minutes.
  4. Remove the lid from the skillet, and give everything a stir. Check the rice, and if it’s cooked, remove the skillet from heat. If it’s still crunchy, place the lid back on and simmer for another few minutes. If the mixture looks too dry, add a bit more vegetable broth.
  5. Once removed from heat, add in the cheddar cheese and stir to combine. Top the skillet with green onions and serve immediately!

Notes

Once cooled to room temperature, leftovers can be stored in an airtight container and kept in the fridge for 3-4 days.
