It’s the holiday season, and you know what that means – turkey! I always grew up eating a turkey for Thanksgiving or Christmas (sometimes both) and it doesn’t feel quite right to not have a turkey during the holidays. As much as I love a freshly roasted bird, I think I love the leftovers more! I love using the bones for soup broth, and there are so many great recipe ideas for the leftover meat.
Along with leftover turkey, you may find yourself with leftover stuffing. This leftover turkey stuffing casserole is the perfect way to turn those two into a dynamite weeknight meal!
What ingredients do you need for this leftover turkey stuffing casserole?
The following is a full list of the ingredients you’ll need to make this simple recipe!
- 3 cups leftover stuffing OR (1) 120g package of boxed stuffing
- 2 tbsp unsalted butter
- ¼ cup diced yellow onion
- 3 cloves garlic, minced
- 3 tbsp all-purpose flour
- ½ tsp salt
- ¼ tsp pepper
- 1 ½ cups vegetable stock
- ½ cup heavy cream
- 3 cups frozen mixed vegetables, thawed
- 2 cups diced, cooked turkey
The topping:
- 1 cup shredded cheddar cheese
- ¾ cup Panko crumbs
- 2 tbsp unsalted butter, melted
How do you make this recipe?
My favorite part about this casserole is that it’s a warm, filling meal that’s done in under an hour! My kind of weeknight meal.
- Start by preheating the oven to 400 F. Spray a 9 x 13” pan with non-stick spray and set aside.
- Prepare the stuffing as per the directions on the box, or measure out 3 cups of leftover stuffing and set aside.
- In a large saucepan over medium heat, melt the butter. Add the diced onion and sauté for 4-5 minutes or until the onion turns translucent. Add the minced garlic and sauté for another minute, before adding in the flour, salt and pepper and stirring to combine, about 1 minute.
- Slowly pour in the stock, stirring constantly. Add the heavy cream, and bring the sauce to a simmer. While continuing to stir, simmer the sauce until it has thickened.
- Remove the mixture from heat, then add in the mixed vegetables, followed by the diced turkey. Stir to combine, then pour everything into the greased casserole dish.
- Prepare the topping. Scatter the shredded cheese over the top of the dish. In a small dish, stir together the Panko crumbs with the melted butter. Scatter the crumbs all over the top of the shredded cheese.
- Bake the casserole for 25-30 minutes or until lightly browned on top and the casserole is bubbling. Remove from the oven and let the casserole cool for 5-10 minutes before serving.
Is this a freezer friendly recipe?
Absolutely! If you plan to make this and store in the freezer to cook later, prepare everything, including the topping, and let it completely cool down to room temperature before tightly covering the casserole dish with aluminum foil and placing it in the freezer.
Before baking, thaw the casserole overnight in the fridge and then bake as directed on the recipe.
The leftovers can also be frozen, stored in an airtight container, for up to 2 months.

When do you add the stuffing? Step 2 says to make the stuffing and then set it aside.
I do not see it mentioned again. Does it go in the bottom of the dish? Does it mix in with the chicken and veggies? Or do you put it on top? Before the Panko? After the Panko?
Hi Janet! Sorry that’s unclear. I’ll update the instructions. You add the stuffing on top of the veggie/chicken mixture as you can see in the pictures above in the blog post. Thanks for pointing this out!
