This beef lasagna soup can be yours in under 30 minutes! It’s a simple, one pot soup recipe that you’ll be making again and again!

It’s definitely still soup season, and we can’t get enough of it around our house! The most important part of any good soup? A good soup broth!

Ingredients for Beef Lasagna Soup

Along with Zoup! Beef Bone Broth, you’ll need only a few simple ingredients for this weeknight, one pot lasagna soup.

  • ground beef
  • yellow onion, diced
  • minced garlic
  • salt
  • crushed tomatoes
  • tomato paste
  • dried oregano
  • lasagna noodles
  • fresh basil
  • burrata

Ground Beef: Since this is a beef lasagna soup, ground beef is what we’re using here. You could also substitute for ground turkey or ground sausage if you have a preference for those.

Crushed Tomatoes: I love using crushed tomatoes vs diced, as they provide the right consistency to the soup. If you only have diced tomatoes on hand, pulse them in a blender until a finer consistency.

Burrata: I LOVE using soft burrata as a topping to this soup, but since it can be hard to find you can absolutely substitute with fresh mozzarella or just grated mozzarella cheese. Parmesan cheese is also delicious in this soup!

Directions for This Easy Lasagna Soup

1. Over medium heat, on a large pot on the stove, cook the ground beef until browned, about 5-6 minutes. Add in the diced onion and cook for an additional few minutes, followed by the minced garlic, for another minute or until fragrant.

2. Add in the dried oregano and salt, and stir to combine. Next, stir in the tomato paste, crushed tomatoes and broken lasagna noodles.

3. Pour in the Zoup! Beef Bone Broth, and stir completely to combine, ensuring that the lasagna noodles are mostly covered by all of the liquid.

4. Turn the heat to medium-high and bring the soup to a boil, before turning it to a simmer for about 20 minutes, or until the lasagna noodles are cooked to al dente. Stir the soup every few minutes to ensure the noodles don’t stick to the bottom of the pot.

5. Once the noodles are fully cooked, stir in the fresh basil, and any salt and pepper to taste. Serve the soup in bowls, topped with fresh burrata and/or fresh mozzarella and parmesan cheese!

Recipe Tip

If the soup seems too thick while cooking and the ingredients are sticking to the bottom of the pot, you can add a bit of water, or more Zoup! Beef Bone Broth. I usually start with 1/2 cup at a time.

How Many Servings Does This Beef Lasagna Soup Make?

This soup will feed a family of four no problem, but if you are feeding a crowd you can definitely double the recipe. The soup also makes terrific leftovers!

As a meal prep option, cook the soup fully through until just before you add the fresh cheese. Allow the soup to mostly cool down the room temperature, about 20 minutes. You can then package the soup into individual containers to serve for later or reheat throughout the week!

To reheat, add the soup back to a pot and bring it to a gentle simmer over medium heat, warming it all the way through, before adding fresh cheese to serve. You can also microwave the beef lasagna soup!

Ingredients

  • 1 lb lean ground beef
  • 1/2 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 1 can (28oz) crushed tomatoes
  • 10 lasagna noodles, broken into pieces
  • 1 jar Zoup! Good, Really Good® Broth Beef Bone Broth 
  • handful fresh basil, torn into pieces
  • 1 ball fresh burrata, or 1/2 cup fresh mozzarella cheese
  • optional: parmesan cheese, salt and pepper to taste
