Beef Lasagna Soup

Description

This beef lasagna soup can be yours in under 30 minutes! It’s a simple, one pot soup recipe that you’ll be making again and again!


Ingredients

Scale
  • 1 lb lean ground beef
  • 1/2 yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 1 can (28oz) crushed tomatoes
  • 10 lasagna noodles, broken into pieces
  • 1 jar Zoup! Good, Really Good® Broth Beef Bone Broth 
  • handful fresh basil, torn into pieces
  • 1 ball fresh burrata, or 1/2 cup fresh mozzarella cheese
  • optional: parmesan cheese, salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned, about 5-6 minutes. Add in the diced onion and cook for an additional few minutes, followed by the minced garlic, for another minute or until fragrant.
  2. Add in the dried oregano and salt, and stir to combine. Next, stir in the tomato paste, crushed tomatoes and broken lasagna noodles.
  3. Pour in the Zoup! beef broth, and stir completely to combine, ensuring that the lasagna noodles are mostly covered by all of the liquid.
  4. Turn the heat to medium-high and bring the soup to a boil, before turning it to a simmer for about 20 minutes, or until the lasagna noodles are cooked to al dente. Stir the soup every few minutes to ensure the noodles don’t stick to the bottom of the pot.
  5. Once the noodles are fully cooked, stir in the fresh basil, and any salt and pepper to taste. Serve the soup in bowls, topped with fresh burrata and/or fresh mozzarella and parmesan cheese!

Notes

If the soup seems too thick while cooking and the ingredients are sticking to the bottom of the pot, you can add a bit of water, or more Zoup! Beef Bone Broth. I usually start with 1/2 cup at a time.
