This past week has been a bit of a blur! I am shocked that I was actually able to get this post out to you guys today. Last week on Monday we hit the road and headed to BC to camp with family until Thursday. The drive was looooong, it took us about 6 hours – mostly due to the wee humans that needed to stop and, well. Wee. Plus there were a few minor mishaps with the truck. But we made it. And it was great! 

We visited The Enchanted Forest – YOU NEED TO GO!! If you have small kids and you’re in the area, of course. I visited this place when I was young and so coming back was all sorts of nostalgic. My kiddos loved it so much, they were practically shaking! It’s basically exactly what it sounds – a fairy tale come to life in a wooded area.

Anyway, before we left for our trip, I perfected this grilled peach crostini appetizer. I knew I wanted to do a peach appetizer this summer, since I adore peaches and I also love, love peaches in savory dishes. Recently I topped a Thai curry with diced peaches and it was amazing!

These crostini will take you hardly any time to make, and they will definitely impress!

What is a crostini appetizer?

I’m almost positive you’ve had some sort of goodie on top of a crostini before. They’re a popular thing to serve at hosted party, since they’re so bite-sized and easy to grab, without a lot of mess! 

Basically, a crostini appetizer is a baguette or slender ciabatta bread, sliced into rounds and topped with something delicious, usually cheese, prosciutto, fruit, tomato, or in this case – peaches! I also use a goat cheese and basil blend on the bread before topping it with peaches.

How do you make peach crostini?

With the grill pre-heated, start by slicing the baguette or slender loaf of crusty bread into 1 1/2″ rounds. Drizzle one side of the bread with olive oil, then place the bread face side down on the pre-heated grill and let it cook for a couple of minutes before removing and letting cool for a bit.

Now, take 3 peaches that have been sliced in half, pits removed, and place them face down on the grill, cooking them for a couple of minutes, or until soft. 

While the peaches are grilling, combine the goat cheese with the diced basil, then smear about a teaspoon of this mixture on each of the grilled baguette rounds. 

Remove the peaches from the grill, then dice them into 1/2″ pieces. Place a few teaspoons of the diced peaches on top of the cheese-covered baguettes. The final step is a nice, light drizzle of honey all over the crostini!

It adds the perfect amount of sweetness to the appetizer, while the goat cheese still makes this very much a savory dish!

Do you have to use goat cheese?

No! You could also use ricotta or cream cheese, or a spreadable vegan cheese if you want to keep things vegan. In that case, think about drizzling the appetizer with maple syrup instead of honey! I just happen to love the creaminess of goat cheese, and the taste of course.

Also – if you don’t have an outdoor BBQ, you can make this recipe using an indoor grill too! Just keep the little grill on fairly hot to make sure you get enough heat going to the bread and peaches!

Ingredients

  • 1 baguette/crostini loaf (~400g)
  • 2 tbsp olive oil
  • 3 peaches, halved with pits removed
  • 6 oz goat cheese
  • 1/4 cup basil, diced
  • 2 tbsp honey

Instructions

  1. Preheat the grill to medium-high and slice the baguette into 1 1/2″ rounds. Drizzle one side of the rounds with the olive oil, then place bread, oil side down on the grill. Cook the breads for a couple of minutes, then remove them and place them face-up on a serving plate. Place the halved peaches on the grill, and cook them for 3-4 minutes.
  2. In a small bowl, thoroughly combine the goat cheese with the basil. On each crostini, spread about a teaspoon of the goat cheese mixture.
  3. Once the peaches are softer from the grill, remove them to a cutting board and dice them into 1/2″ peaches. Top the goat-cheese covered crostini with a tablespoon or two of diced peaches, then drizzle all of the crostini with the honey. Serve immediately!

The crostini can be left out at room temperature for a few hours, and any leftovers can be stored in an air-tight container for a few days, but they’re best enjoyed immediately!
