Guys, yesterday was my anniversary! Hooray!
We celebrated with our first date night out in a very long time, before the start of this whole pandemic. On Saturday we scratched an itch that I’d been having for sushi and it was SOO good. Plus it was just lovely to be out again, downtown and strolling around hand in hand. Things were different, of course. There was hardly anyone in the restaurant, the servers were wearing masks and there was actually parking downtown (hah)! But it was lovely.
We saw a bunch of baby geese that totally made my night, and we got ice cream for dessert from Dairy Queen. It was their new raspberry fudge blizzard flavor, and oh my word. It was glorious! The night was finished off with a movie and a glass of wine. Perfect! ❤
Since our actual anniversary was Sunday, we celebrated with the kids with a super cheesy and decadent lasagna, and a strawberry-rhubarb galette. Aaah yes. Lots of good eats this week. The pie was great, but this super simple 3 ingredient flourless chocolate cake would have been another great option!
How do you make a 3 ingredient chocolate cake!?
It’s pretty amazing that you can make a decadent, fudgy chocolate cake with only 3 ingredients, right? Plus, it’s totally gluten-free, so it’s a great option for any guests or family members that have gluten intolerances.
So, how do you make this 3 ingredient wonder?
You need:
- eggs (8 of them)
- dark chocolate
- BUTTER
Isn’t it true that butter just makes everything better?
Anyway, to make this cake you start by whipping up the eggs on high in a stand mixer until they’re huge and fluffy, about 3x the volume. In the mean time, microwave the butter and chocolate together until smooth and delicious.
Then, fold the egg mixture into the chocolate. Don’t dump it all into the chocolate right away, start with about half of the egg mixture and use a spatula to fold it in, before adding the other half. Combine it all together until everything is incorporated.
Then, pour the mixture into a greased springform pan.
Bake the cake for 40-45 minutes, or until the center no longer jiggles when you lightly shake the pan. Allow the cake to cool completely before wrapping it in saran wrap and then refrigerating for 3-4 hours before serving.
Should you frost this 3 ingredient cake?
You absolutely could, but I think this cake is delicious just as it is. If you want something simple and delicious, drizzle some melted chocolate on top, or make a simple chocolate ganache by whisking together equal parts chocolate and warm cream until smooth.
I actually think the best topping of all is a simple dusting of powdered sugar! Not only is it pretty, it adds a nice little bit of sweetness against the super dark chocolate flavor.

This cake is PERFECT with some berries, fresh whipped cream or a bit of vanilla ice cream. I threw a few mint sprigs on the cake too for a little pop of color! You know what else tastes really good with this cake? Champagne! I know from experience, hah!
While I might have had a galette for my anniversary dinner last night, you should definitely keep this 3 ingredient cake in mind for your next celebration, be it a birthday, anniversary or just a dinner party.

Ingredients
- 8 large eggs
- 16 oz chocolate chips (or chopped dark chocolate)
- 1 cup unsalted butter
Instructions
- Preheat the oven to 325 F and line a 9″ springform pan with parchment paper. Grease the entire pan with non-stick spray.
- In the bowl of a stand mixer fitted with the whisk attachment, or using a handheld mixer, mix the 8 eggs on HIGH for 6-7 minutes, or until the volume has increased substantially and they’re light and fluffy.
- Add the chocolate and the butter together in another microwave-safe bowl. Put the bowl in the microwave and heat on high for 30 seconds at a time, stirring in between, until everything is smooth and melty.
- Using a spatula, fold half of the whipped egg mixture into the melted chocolate, folding until thoroughly combined. Fold in the remaining egg mixture, again folding with the spatula gently, until the mixture is consistent and smooth. Pour it into the prepared pan and smooth the top out with your spatula. Bake the cake for 40-45 minutes, or until the cake doesn’t jiggle in the center when given a slight shake. Remove the pan from the oven and allow it to cool completely, about 1 hour, before wrapping it in plastic wrap and placing it in the fridge for 3-4 hours.
- When ready to serve, run a knife along the outer edge of the cake, then release the cake from the pan. Invert the cake on to a plate or parchment to remove the bottom layer of parchment, then flip back over and prepare for serving, with berries, powdered sugar, or whipped cream. Enjoy!
Leftover cake keeps well in the fridge for 3-4 days, or up to 2 months in the freezer, in an airtight container.
