I have something for scary to tell you all. TODAY (June 21st) is the longest day of the year. Eeek! It also happens to be the first day of summer. YAY! Since I’m the biggest fan of summer there ever was, this makes today an exciting day, but there’s definitely a little part of me that mourns the day as well. The days will slowly begin getting shorter already!

I’m never prepared for how fast summer goes. BUT I am definitely going to do my best to enjoy it! We already have 4 camping trips under our belt and a few more to go.

So, let’s celebrate the first day of summer with SPRINKLES! Sprinkle sugar cookies to be exact.

How do you make these sprinkle cookies?

These cookies are so simple! I actually started developing these cookies last year and just kept making them again and again until I got them right. There were a few elements that I was playing with, including the amount of butter, the sugar and whether or not to chill them!! More on that later.

To start, you first need to decide what sprinkle mix you’re going with! I love using fancier sprinkle mixes that I get from Bulk Barn, like this one.

After that very important step is behind you, start with whisking the dry ingredients together in one bowl:

  • all-purpose flour
  • baking powder
  • baking soda
  • salt
  • cornstarch

In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld electric mixer, beat together the room temperature butter and sugar for about 1 minute on high. Add in the egg, and mix for another 30 seconds to a minute, before adding the vanilla extract and mixing again.

With the mixer running on low, slowly add the dry ingredients until a nice soft dough forms. Add the sprinkles and gently mix on low again.

Now it’s time to bake!

Do you have to chill the dough for these sugar sprinkle cookies?

OK here’s the thing. It totally depends on how you want your cookies to turn out! If you want chewy, slightly flatter cookies then you should not chill the dough (this is my preference and how the recipe is written). If you prefer a slightly puffier cookie that is more soft than chewy, than I would suggest chilling the dough for 1-2 hours.

Either way, the cookies are delicious!

When you’re ready to bake them, roll the cookies into balls using a large cookie scoop. If you use a smaller scoop, you will need to reduce the bake time by a couple of minutes.

Place the cookie balls at least 2″ on an ungreased cookie sheet and bake the cookies in an oven preheated to 350 for 8-10 minutes. The cookies will be done when they’re very slightly browned on the underside and still look slightly underbaked in the middle.

Let them cool for 5 minutes on the cookie sheet before using a spatula to remove the cookies to a cooling rack to cool completely. The cookies will spread out a bit and flatten as they cool.

The cookies are amazing when they’re fresh from the oven!

How long do these cookies last?

The cookies stay perfectly chewy and delicious when kept at room temperature, in an airtight container, for 1 week. They’re still good for another week but they will just not be as fresh.

You can freeze baked cookies for up to 2 months, or even unbaked cookie balls. Bake them right from frozen and just increase the bake time by a few minutes!

Ingredients

Scale
  • 1 1/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup + 2 tbsp granulated sugar
  • 1 large egg
  • 2 tsp pure vanilla extract
  • 1/3 cup sprinkles

Instructions

  1. Preheat the oven to 350 F and set aside two large ungreased baking sheets. In a large mixing bowl, whisk together the flour, baking powder, baking soda, cornstarch and salt. 
  2. In the bowl of stand mixer fitted with the paddle attachment or using a handheld electric mixer, beat the butter and sugar together on high for 1 minute, or until combined and creamy. Add the egg and mix for an additional 30 seconds to a minute. Add the vanilla extract and mix again briefly. With the mixer running on low, slowly add in the dry ingredients and mix just until the cookie dough comes together. Add the sprinkles and gently mix on low just until combined.
  3. Using a large cookie scoop, place the cookie dough balls 2 inches apart on the cookie sheet and place the sheet in the oven to bake for 8-10 minutes. The cookies are done when the underside is slightly brown and the centers look slightly underbaked. The cookies will continue to bake on the sheet as they cool down. Let the cookies cool for 5 minutes before transferring them to a wire rack to finish cooling. 

Cookies can be kept at room temperature, in an airtight container, for 1-2 weeks. You can also freeze the cookies for up to 2 months, as well as freeze the cookie dough balls for up to 2 months. To bake from frozen, increase the bake time by 3-4 minutes.

Notes

*If you like your cookies more rounded and soft, chill the dough after step 2 for up to 2 hours before scooping and baking.
