Every birthday should include the best birthday cake ice cream! This no-churn cake batter ice cream is SO easy to make, naturally colored and never fails to bring a smile. Sprinkles for everyone!

You should know by now, that I LOVE sprinkles. I mean, who doesn’t!? They add so much fun to everything, and you can’t have a birthday without sprinkles! 

I’m guessing you also know that I’m a big fan of no-churn ice cream recipes. I’ve got a few on the blog! I listed them at the end of this post for you 😉

So, sprinkles and ice cream = no-churn birthday cake ice cream!

Let’s get one thing out of the way right away. Are you wondering how I got the vibrant blue color without any artificial dyes? Meet my new little secret ingredient: spirulina powder! Spirulina is actually dried up algae, but don’t be turned off by that. It doesn’t add any weird flavours to the ice cream.

I’ve been using the blue mylk latte powder from Organika to naturally colour things around the house. (This post is not sponsored, I just really like the product)!

You can also buy a pink mylk latte powder, which is just as fun!

Anyway, if you want to make this no-churn funfetti birthday cake ice cream all one colour, just skip over the part in the recipe below where you divide the mixture by two. Also, feel free to just use regular food colouring paste (no judgement here)! 1-2 drops should do it.

What does no-churn mean?

It means for those of us without an ice cream maker, we can make a terrific treat with just a few simple ingredients! I’ve been making no-churns for a few years now and I haven’t looked back. The possibilities are endless!

How do you make no-churn birthday cake ice cream?

I’ll provide more details in the recipe card below, but basically, what you need to do is thoroughly whip 2 cups of cream with a touch of vanilla bean paste, then fold in a bit of funfetti cake mix, condensed milk, and then sprinkles. 

The funfetti cake mix gives the ice cream that iconic cake batter taste, which we ALL love. Right?! ALL of us. 

Layer the ice cream in a freezer-safe container or loaf pan, and freeze the ice cream for at least 6 hours, and serve.

No-Churn Birthday Cake Ice Cream

Description

Every birthday should include the best birthday cake ice cream! This no-churn cake batter ice cream is SO easy to make, naturally colored and never fails to bring a smile. Sprinkles for everyone!


Ingredients

Scale
  • 2 cups heavy whipping cream
  • 1 tsp vanilla bean paste
  • optional: 1 tbsp Organika blue mylk latte powder/2-3 drops gel food colouring
  • 1 300 mL can sweetened condensed milk
  • 1/2 cup funfetti cake mix
  • 1/2 cup sprinkles*

Instructions

  1. Pour the heavy whipping cream into the bowl of a stand mixer fitted with the whisk attachment and beat on high for 2 minutes, before adding the vanilla bean paste and continuing to beat until thickened.
  2. Optional step: If you plan to colour the ice cream, remove half of the mixture to another bowl and add the blue mylk latte powder or food colouring to the remaining mixture, and beat for a few minutes to combine thoroughly.
  3. If using two different colours, divide the sweetened condensed milk and funfetti cake mix between the mixtures and use a spatula to combine into each half. Layer the mixtures into a standard sized loaf pan or freezer-safe container, alternating with the sprinkles. Freeze for 5-6 hours or until firm.

Ice cream will keep in the freeze for 1-2 weeks

Notes

*I highly recommend buying jimmies, rather than the nonpareil sprinkles, which can bleed colour into the ice cream.
