*Please note* this post was originally published in 2017. I’ve redone the photos but the recipe remains the same.

I have a new addiction. No, it’s not biscotti (that’s definitely an addiction, but nothing new).

For the past couple of weeks, every night, about 30 minutes before I get into bed, I stick an electric blanket under my sheets and crank it on high….gaaah!! It’s amazing. I no longer have to wait for my body heat to warm up the cold bed. The sheets are SO toasty and warm. I literally fall asleep within minutes. My husband is a night owl and always comes to bed hours after me, so I’ve never been able to rely on his body heat – but really, by “night owl” I mean he hasn’t turned into a pumpkin by 9pm.

Electric blanket, I love you. Please don’t short-circuit and burn down my house. 🙂

Ok, now we can talk about my other addiction….which just happens to be this chocolate peppermint biscotti!

What is biscotti?

Biscotti basically means “twice baked cookie”.  It has many variations, but traditionally, these cookies are shaped into long pieces and are quite hard (perfect for dunking)!

My love for biscotti is strong. One of my favourite things in the world is dunking that hard cookie into a cup of coffee, softening it up and munching it. It turns my coffee drinking into a whole experience – one that is much more civilized than my usual slamming a cup back while simultaneously dressing a toddler and slapping foundation on.

My usual go-to recipe is this almond-vanilla biscotti, but since we’re in the season of indulgence I thought it only prudent to make a super chocolate, dunkable cookie. With a touch of peppermint.

These particular biscotti aren’t too hard, so you can easily eat them without dunking, but you’d be missing out big time!

How do you make chocolate peppermint biscotti?

If you’ve never made biscotti before, don’t be intimidated. Yes, they’re twice baked, but the second baking time is only 15 minutes long!

The biscotti “dough” comes together just like a regular cookie, but you’ll find it is much more stiff than a typical cookie dough. That’s what helps make them so hard and dunkable! You will need to shape the dough into two equal logs. I like to use a ruler to take the guess-work out of things and ensure that both logs are of equal dimensions. Each portion should be about 12 x 4″ and about 1″ high.

When you remove the biscotti from the oven the first time, allow it to rest for at least 20 minutes before slicing the biscotti, on the diagonal, into 1″ slices. The more you angle your knife while slicing, the longer each biscotti cookie will be.

How long do chocolate peppermint biscotti cookies last?

Technically, I should say the cookies will last about 2 weeks at room temperature, in an airtight container. If we’re speaking off the record though, I’ve been known to eat/dunk biscotti that’s a month old. The harder the better, right!?

These cookies were my second offering for my group cookie exchange, along with my holiday twix bars. Since I made a double batch, I also plan on gifting some to a few lucky neighbours and pre-school teachers. I love how you can wrap up biscotti in a pretty cookie bag and tie it with a bow. It’s a nice alternative to a Tupperware of cookies (which I definitely wouldn’t say no to).

If you’re looking for a fun alternative for a cookie exchange, or you just want a batch of chocolate biscotti for your morning coffee, I’ve got your back.

Description

Your morning coffee has never tasted better! These double chocolate peppermint biscotti are SO delicious. They also make for a terrific holiday biscotti gift!

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/2 cup unsalted butter, softened to room temperature
  • 2 eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 tsp pure peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 4 oz chocolate, melted (for drizzling)
  • 1/2 cup crushed peppermint hard candy (6-7 candy canes)

Instructions

  1. Preheat the oven to 350 F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, whisk together the flour, cocoa, baking powder, baking soda and salt.
  3. In the bowl of a stand mixer fitted with the paddle attachment, or using a handheld mixer, combine the sugar and butter together and mix on medium-high until the butter is light and fluffy. Add in the eggs, one at a time, mixing in between. Add the vanilla and peppermint and mix on low until combined. With the mixer continuously running on low, slowly adding the flour mixture until a soft dough forms. Stir in the chocolate chips by hand with a large wooden spoon.
  4. Divide the dough into two, and shape each portion into a 12 x 4″ (about 1″ high) log on the baking sheet. Place the baking sheet into the oven and bake for 25 minutes. Remove from the oven, and let the biscotti rest for 20 minutes before removing to a cutting board and slicing the biscotti, on the diagonal, into 1″ slices.* The more you angle your knife while slicing, the longer your biscotti will be.
  5. Reduce the oven temperature to 325 F and prepare two lined baking sheets. Place the cut pieces of biscotti, cut side up, onto the baking sheets and bake for another 15 minutes. Remove, and allow the biscotti to cool completely before drizzling the cookies with melted chocolate and crushed candy.

Biscotti will keep at room temperature, in an air-tight container for 2 weeks, or up to 3 months in the freezer.

Notes

  1. In order to prevent crumbling while cutting, fill a spray bottle with room temperature water and lightly spritz all over the baked biscotti, then leave them to sit for about 5 minutes before using your knife to cut slices. The water will soften up the crust just enough that it won’t crumble on you!

  1. Making these immediately! I haven’t had biscotti in ages and love ANYTHING chocolate / peppermint. Cracking up at your little note to your electric blanket. 😉

    1. I love all chocolate and peppermint toooooo! So good! Haha – I hope that it’s listening. I do wonder about it’s safety… 😉

  2. I’m going electric blanket shopping tomorrow 🙂 These look FABULOUS! When my sister and I were growing up, our grandma always make skorpe, which is sort of the Swedish version of biscotti. Dunking it in tea for breakfast was a must! It really is a whole experience, and far preferable to breaking your jaw on a crunchy cookie. I love that these are on the softer side though! Have a great weekend!

    1. Haha – smartest idea ever!! You won’t regret it! Mmm I’ve never had skorpe but it sounds like something I would definitely love!! Any type of cookie you can dunk is A+ in my book! Have a great weekend too, my friend!

  3. I know what you mean about the electric blanket! It’s the best! Your biscotti looks divine, all chocolatey. I’ve never had biscotti that wasn’t crunchy, so I need to try this!! Peppermint gives it that Christmas feel…ahhhh!!! Ready to dunk! 🙂

    1. It really is the best!! So cozy!! Ah – yes it’s great and terrible because I can just eat them like cookies – no hot drink required!! Thanks Kim!

  4. I loooooooove my electric blanket!!! Can’t survive winter without it lol. This biscotti looks yummy. I love making biscotti!!

    1. Aren’t they the best!? I am so glad we live in the age of electric blankets haha – thanks Kelly! It’s so good!

  5. That electric blanket sounds lovely! Biscotti is one of my biggest weaknesses too, not to mention chocolate and peppermint! I need to make these and do some serious dunking. 🙂

    1. Mine too, Marcie! I pretty much always have some hand, which means I’m pretty much eating a daily cookie. Probably not the best habit 😉 Thank you my friend!

  6. Oh, these would make fantastic gifts for family and friends! I think everyone loves a good biscotti to dunk in their hot beverage ;)! And I hear ya on the love for your electric blanket! I do the same thing everyone night! Nothing better than a cold night snuggled up with flannel bed sheets and an electric blanket!!

    1. It’s such a great gift!! I love being able to wrap them up in a clear baggie with a bow 🙂 That’s so funny that you do the same thing with your blanket!! Maybe it’s a Canadian thing? 😉 Cheers Leanne!

  7. Oh my goodness I saw an electric blanket at Costco the other day and I was so tempted to get it!! It gets so cold in my living room that I usually need to wrap myself in a blanket when I am watching TV. An electric blanket would be so wonderful! Now onto your Double Chocolate Peppermint Biscotti – I love the holiday twist on it! And using a ruler is so smart! I have never made biscotti before, but if/when I do, I will definitely do that! 🙂

    1. Aah you totally should have bought it!! it is SO wonderful – you will have to put it on your Christmas list! Thank you!! It’s soo good – I’m a little sad as I only have 2 left, so I’ll have to make some more soon! I hope you try biscotti soon! Cheers!

  8. Haha, you’re funny with your electric blanket, Katherine! Sometimes I feel I need one while I’m on the bus 🙂 But there’s nothing funny about these biscotti – seriously Christmas treat. I used to think it was hard to make them (Also I would think thanks to long baking they were very dry and hard kind of cookies). However, when I tried them first time two years back, I was surprised how easy and delicious they were. Well done!

    1. Ooh maybe you can get one with a battery, so you can take it on the bus 🙂 There wouldn’t be anything weird about it, I promise. There is a LONG bake time for sure with biscotti, but so worth it! And nothing hard at all. Thank you so much Ben!

  9. I’ll raise you one: a heating pad beneath me and a heated blanket on top of me. HA! I’m a super baby about the cold. Just as warm and cozy on a soul level? This biscotti. I never “got” biscotti til I tried it homemade. This is a beautiful version!

    1. OMG that sounds amazing Jessie haha great minds think alike!! I HATE being cold so I hear ya there!! Thank you my dear!

  10. I am with you! My love for biscotti is strong too! And this flavor combination has my heart skipping a beat! Love!!!
