Guys, this is #2 in my February CHOCOLATE posts! I’ve been munching on this crispy dark chocolate bark for the past couple of weeks, and there are no signs that I’ll be slowing down any time soon! 

When it comes to the month of February, and Valentine’s Day desserts in general, I always think of chocolate and strawberries together. Chocolate dipped strawberries, anyone? 

This crispy strawberry chocolate bark has a lot of the same flavors as those famous chocolate dipped strawberries, but with the added bonus of some crunch. Plus, it’s super portable so you can carry some around in your purse. Ha! Or am I the only one who has chocolate in their purse….!?

Also, you guys. I know I’m always saying this, because it really is kind of what I strive for, but this recipe is SO EASY!! It’s crazy easy. All you need is:

  • dark chocolate 
  • crispy rice cereal
  • freeze-dried strawberries
  • mini white chocolate chips

You can keep the white chocolate chips out, but I think they add a nice little texture and flavor to the whole affair!

How do you make chocolate bark?

Again. SO EASY.

Start by melting your chopped chocolate in a large microwaveable bowl. You can also use a double boiler for this, but I prefer to just do it in the microwave! Make sure you heat the chocolate in 30 second increments, stirring in between each interval. Once the chocolate is entirely melted, add the crispy rice cereal, and freeze-dried strawberries.

Stir it all up, then spread it out all over a parchment-lined baking sheet, as thin as you’d like.

Working quickly, and before it has hardened, top the bark with additional freeze-dried strawberry and the mini white chocolate chips, pressing them in gently with your hands. Place the bark in the fridge to harden, about 15 minutes. 

What kind of chocolate do you use for strawberry chocolate bark?

I like to use semi-sweet chocolate chunks or chips, but you can use other kinds based on your preference. Milk chocolate would also work if that’s more your thing, or even a super dark chocolate. If you’re using anything darker than 80% the chocolate might need a bit of coconut oil to help things melt properly. As always, I recommend using a good quality chocolate!

Where do you buy freeze-dried strawberries?

Typically you should be able to find freeze-fried strawberries at a health food store, or at a place like Bulk Barn. I actually buy this giant can from Amazon. The same brand also sells freeze-dried pineapples and some other fruits and vegetables. The pineapple and strawberry are my favorite!

I haven’t tried it, but I would assume dehydrated strawberries would work well too.

How long does chocolate bark last? Do you have to keep it refrigerated?

This bark actually holds up just fine at room temperature, but any warmer than that and it might get a little soft. I like to ensure my dark chocolate bark will last a while, so I keep mine in the fridge. It would be good for 1-2 weeks in the fridge, and up to 1 week at room temperature. Truthfully, it would be just fine after this much time, but it might start to taste a little stale.

I love that this easy chocolate treat is so perfect for Valentine’s. I’m imagining you all making it and bringing it to a Valentine’s Day party or bagging it in little clear treat bags like these for cute little gifts. Or, just make it and keep it all to yourself. No judgement.

This crispy strawberry chocolate bark is one of the best easy Valentine’s treats! It’s an easy dark chocolate bark recipe made with freeze-fried strawberries and crispy rice cereal!


  • 1 lb dark or semi-sweet chocolate, chopped
  • 1 cup freeze-dried strawberries*, divided
  • 1 cup crispy rice cereal
  • optional: 1/2 cup mini white chocolate chips


  1. Line a baking sheet with parchment paper and set aside. In a large microwaveable bowl, place the chopped chocolate, and microwave on high for 30 seconds. Stir the mixture, then repeat, stirring every 30 seconds until the chocolate is smooth. Using a large wooden spoon, stir in half of the freeze-dried strawberries, and the crispy rice cereal until all of the cereal is coated.
  2. Using a spatula, spread the mixture out onto the parchment-lined baking sheet, spreading it as thin as you’d like. Working quickly, before the chocolate hardens, scatter the remaining freeze-dried strawberries and white chocolate chips, if using, over the top of the bark. Press down lightly with your fingers to make them stick. Refrigerate the bark in the fridge for 15-20 minutes or until hard, before using your hands to break it into chunks.

Chocolate bark can be kept at room temperature, in an airtight container, for about a week, or in the fridge, for up to 2 weeks. The bark also freezes well, up to 2 months.
