Guys! It is HOT HOT HOT here. I’m not going to complain because I have spent most of this summer complaining about the lack of heat! And I’m (mostly) loving this heat wave. Finally, a few days without rain! But the heat does get to me, in a way that makes me very lazy. Once 3 or 4pm rolls around, I’m cooked! Our dinner last night was smoothies and grilled cheese. Etienne has been away working so luckily he wasn’t around to have anything to say about it, hah! The kids were stoked.
Anyway, those lazy days can also be times when you actually want something delicious, but just don’t feel like cooking. That’s where Hello Fresh comes in! They will deliver a week’s worth of meals to you in a box, complete with all ingredients and instructions. They literally saved me when Hattie was born! I was still able to get some rockin’ meals on the table without worrying about the meal planning part.
Hello Fresh asked me to blog about one of their recipes and once I looked through them all, this one in particular jumped out at me! I’m such a fan of pineapple in savory dishes.

What’s in chicken and pineapple stir fry?
Well, chicken. And pineapple. AND….
- sugar snap peas
- red onion
- cashews
- green onions
Everything is all wrapped up in an Asian-inspired sauce. There’s a little sweet chili sauce added in, so you get that delicious sweet and spicy flavor! The dinner takes less than 30 minutes to make, especially if you have all of the ingredients pre-prepped.
How do you make this dish?
Start with cooking the rice so it’s ready by the time everything else is cooked. Once it’s cooked through, throw in the diced green onions and stir it into the rice.
At this point, you should also turn the broiler to high to be ready to cook the chicken tenders. They only take 7-8 minutes to cook under the broiler! Use a temperature gauge to make sure the chicken is cooked to a healthy temperature (165 F).
I also whisk together the ingredients for the sauce: hoisin and soy sauce, sweet chili sauce and cornstarch.
Over medium-high heat, toast the cashews in a large pan until fragrant, for a few minutes. Remove the cashews to a plate, then add sesame oil to the pan, allowing it to heat up before sautéing together the garlic, red onion, snap peas and pineapple for a few minutes, or until the peas are softened. Once the chicken is cooked, you can add it to the pan too, along with the sauce. Allow the sauce to come to a boil and then turn it down to a simmer until it thickens up.
Remove the pan from heat, and serve the stir fry over the rice. Add the toasted cashews and enjoy!
I love throwing in some fresh pineapple along with the cooked, but that’s because I’m a pineapple freak!

Ingredients
- 3/4 cup jasmine rice
- 2 green onions
- 1/3 cup sugar snap peas
- 1 cup diced fresh pineapple
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 1/2 tbsp cornstarch
- 2 tbsp sweet chili sauce
- 1 lb chicken tenders
- 1 tbsp olive oil
- 2 tbsp cashews
- 1 tbsp sesame oil
- 1/4 cup red onion, diced
Instructions
- Before starting, preheat your broiler to high. Wash and dry all produce. Bring 1 1/4 cups water to a boil in a covered medium pot. Add rice to the pot of boiling water. Reduce heat to low. Cover and cook, until rice is tender and liquid is absorbed, 12-14 min.
- While the rice cooks, thinly slice the green onions. Trim the peas. Cut pineapple into 1/2-inch pieces. Whisk together the hoisin-soy, cornstarch and sweet chili sauce in a medium bowl. Set aside.
- Pat the chicken dry with paper towels, then arrange chicken on a foil-lined baking sheet. Toss with 1 tbsp oil. Season with salt and pepper. Broil in the middle of the oven, until cooked through, 8-10 min.
- While the chicken broils, heat a large non-stick pan over medium-high heat. Add the cashews to the dry pan. Toast, stirring often, until golden-brown 2-3 min. (TIP: Keep your eye on them so they don’t burn!) Transfer to a plate.
- Add sesame oil, then the peas, red onions and pineapple to the same pan. Cook, stirring often until tender-crisp, 2-3 minutes. Season with salt and pepper. When the chicken is cooked through, add to the pan with the veggies. Add the sauce from the medium bowl and bring up to a boil. Simmer, stirring occasionally, until slightly thickened, 1-2 min. Remove from heat.
- Fluff the rice with a fork, then season with salt. Stir in the green onions. Divide rice between bowls. Top with the chicken and pineapple stir-fry. Drizzle over any remaining sauce left in the pan. Sprinkle over the cashews.
Leftovers can be stored in an airtight container in the fridge for 2-3 days.
