Easy breakfast sandwiches for the win! These breakfast croissants are freezer friendly and can even feed a crowd!

I’ve been wanting to publish these breakfast croissants for a while, now! It’s one of those recipes that we make all of the time, but because they’re SO good fresh and right out of the oven, we always eat them before I can take pictures! Plus, I make them in the morning, when the lite is shite and I can’t get a great picture!

SO, I dedicated an afternoon to them recently. They deserved the attention!

Please tell me you like croissants. I used to turn my nose up a bit at them when I’d see them as an option on a platter, but then I realized just how delicious they are, especially when served warm!

I will always remember this particular croissant I had in Montreal, over 12 years ago! My friend and I went there for a little girls’ trip and had an amazing time, sightseeing, riding bikes and shopping. One afternoon we stopped at a café and ordered these chocolate-filled croissants. OH MY GOD. They were so good! The café served them to us warm…they were heavenly.

So….these are not THOSE….but they’re pretty good. Ha!

What do you put on a croissant for breakfast?

These easy breakfast sandwiches are so simple! The basics are cheese, ham (or bacon) and eggs. I just love fluffy scrambled eggs, don’t you? They’re especially good all pressed together with melty cheese and buttery, flaky croissant.

Start by laying out one half of the croissants on a large baking sheet. Top with cheese, followed by the ham, then the egg. You could also add another piece of cheese on top of the egg, before closing the lid of the sandwich with the other half of croissant. Bake the sandwiches for about 8 minutes, then serve immediately, or cool and refrigerate/freeze for another day.

Can you freeze these breakfast croissants?

You can definitely freeze these! That’s half the magic of this recipe. Wait until the baked sandwiches have completely cooled down, then wrap them tightly in plastic wrap before placing them in the freezer, for up to 2 months. To reheat, unwrap the croissant, place it on a plate and heat in the microwave on high for 1 minute; or, you can place them on a baking tray and heat them in the oven at 300 F for 10-12 minutes.

We had a great holiday weekend spending some quality family time….in the snow, but still. Quality! The crazy school week is up and running again, and we’re going to need a few grab n’ go breakfasts like this one!

Description

Easy breakfast sandwiches for the win! These breakfast croissants are freezer friendly and can even feed a crowd!


Ingredients

Scale
  • 6 croissants, sliced in half lengthwise
  • Havarti cheese (or other) approx. 6 slices
  • thinly sliced ham* approx. 6 slices
  • 1 tbsp unsalted butter
  • 6 large eggs
  • 1/4 cup whole milk
  • salt and pepper, to taste

Instructions

  1. Preheat the oven to 350 F and place 6 croissant halves on a large rimmed baking sheet. On each croissant half, place one piece of cheese, topped by one piece of ham.
  2. In a large non-stick pan or cast iron pan, melt the butter over medium-high heat. Crack the eggs into a large mixing bowl, then break up the yolks and gently whisk with a fork. Add the milk and whisk again. Once the butter is melted, pour the eggs into the pan. Using a spatula, gently move the eggs around from time to time, cooking them up (scrambled eggs). Season with salt and pepper, to taste. Remove the eggs from heat.
  3. Divide the eggs between each croissant half. Place the top croissant half on top of the eggs, for each croissant. Place the baking tray into the oven and bake for 8- 10 minutes, until the cheese is melty. Serve immediately.

If you’re planning on freezing the sandwiches, allow them to completely cool before individually wrapping them in plastic wrap and placing them in the freezer, for up to 2 months. To reheat, unwrap the frozen croissant, place it on a plate and microwave for 1 minute, OR, place the frozen croissant on a baking sheet and bake in an oven preheated to 300 F for 10-12 minutes.

Notes

*You could also use bacon, vs ham. I recommend 2 slices cooked bacon per sandwich.

  1. These would be such a huge hit in my house Katherine! Breakfast is our favourite meal, and we will have breakfast for any meal of the day. I’m picturing these for dinner too! Love that they can be made ahead and frozen for quick weekday mornings or a lazy weekend brunch!

  2. I literally had the best croissant of my life in France…so amazing!!! These sound delish! You could definitely use leftover ham or turkey as the meat option the day after Thanksgiving for a quick breakfast before you go Black Friday shopping! Yay!

  4. My son would totally love these! Me too. Such a great simple idea for a tasty breakfast. Give me a cup of strong black coffee and two breakfast croissant on a Sunday morning, mmm… I might even add hash browns on the side, just to load up on carbs:)
