Description

This tropical granola is perfect stirred into yogurt, or eaten on its own as a tasty snack! Filled with all of your favorite tropical fruits, you’ll love this tropical fruit granola!


Ingredients

Scale
  • 3 cups rolled oats
  • 1/3 cup coconut oil
  • 1/3 cup honey
  • 1 cup pecans, chopped
  • 1 cup dried mango pieces
  • 3/4 cups dried pineapple chunks
  • 1 cup dried coconut chips or flakes
  • 1/2 cup golden raisins

Instructions

  1. Preheat the oven to 300 F and line a large-rimmed baking sheet with parchment paper or a silicone baking mat. Place the rolled oats in a large bowl, then in another bowl, microwave the coconut oil and honey together, about 30 seconds on high. Stir together, then pour the mixture over the oats, stirring to completely coat the oats. Add the chopped pecans.
  2. Spread the granola mixture out in an even layer on the baking sheet, then place in the oven for 40 minutes, giving the granola a stir every 15 minutes. Remove the granola from the oven, and allow it to cool for 10 minutes before adding in the dried mango, dried pineapple, coconut chips and raisins.
  3. Once completely cool, store the granola in an airtight container, to keep fresh for 1 week to 10 days at room temperature.
