Grilled Turkey Thighs with Chimichurri

Description

Fresh herbs and juicy grilled turkey thighs make the best summer meal! Make these grilled turkey thighs with chimichurri sauce for a simple and delicious weeknight dinner! 


Ingredients

Scale
  • 4 bone-in turkey thighs
  • 1/4 cup olive oil
  • 1 large lemon
  • 1/3 cup fresh basil, chopped
  • 1/3 cup fresh parsley, chopped
  • 1 tbsp dried rosemary
  • 1/2 tsp dried thyme
  • 3 cloves garlic, minced 

 

Chimichurri Sauce

  • 1 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Place the turkey thighs in a large resealable freezer bag. In another bowl, whisk together the olive oil, juice of the lemon, basil, parsley, rosemary, thyme and garlic cloves. Pour this mixture all over the raw turkey thighs and seal the bag. Marinate the turkey in the fridge for 4-6 hours, or overnight.
  2. When ready to grill, remove the turkey from the fridge and let it come to room temperature for about 30 minutes. Heat the grill to 375 F. Remove the turkey from the marinade and place it on the grill, cooking for 25-30 minutes, or until a meat thermometer reaches a temperature of 165 F.
  3. While the turkey is grilling, make the chimichurri sauce. In a food processor or blender, combine all chimichurri sauce ingredients until nearly smooth, with a bit of texture.
  4. Serve the grilled turkey topped with chimichurri sauce and enjoy immediately.

Notes

If you’re using boneless turkey thighs, reduce the grill temperature to 15-20 minutes.
