Delicious over everything, from pancakes to oatmeal! Homemade cranberry curd for the holiday season!

What you'll need....
-fresh (or frozen) cranberries
-granulated sugar
-water
-egg yolks
-unsalted butter
Full Recipe
Step by Step
1. Combine the cranberries, water and sugar in a medium saucepan.
2. Simmer the mixture for 10 minutes
3. Transfer everything to a blender and blend for 1-2 minutes or until smooth

4. Add everything back to the pot along with 3 egg yolks and whisk to combine.
5. Heat and whisk for 5-10 minutes until thick!
6. Remove from heat and stir in the butter

Cool completely before storing in the fridge!
Tip
: Curd will thicken up in the fridge as it gets cooler!

TOP TIPS
- If the mixture isn't smooth after using the blender, use a sieve.
- Use the curd as a cupcake or cake filling or make a tart!
- Cranberry curd will last in the fridge for up to 2 weeks!
