This quote is from my favorite children’s book, given to me by my Aunt Linda when Oscar was born (thank you Aunt Linda!!!). Reading the book always reminds me of my Dad, who really loved spring and everything new that comes with it!if i could have been there

Spring goes hand in hand with Easter. What are you doing for Easter this year? Wherever you are, I hope you are with friends or family and enjoying a lot of yummy food. If you haven’t tried my mini egg cookie skillet yet, you’re missing out!

We’re headed to Kelowna this Easter, to spend time with Etienne’s sister and her family. Their place is our own little vacation paradise. The house has the most wonderful balcony off the kitchen, overlooking a golf course. I feel completely at peace stretched out on the couch on that balcony, watching the hummingbirds and listening to the birds (and golfers). Aaaah relaxation at it’s finest. A glass of wine in my hand is the only thing missing from that image.

Since we will not be at home this year, I will be bringing along the Easter bunny’s treats and baskets to surprise the kids with on Easter morning, and I’ll also be bringing along a batch of my Easter sprinkled chocolate dipped almond-vanilla biscotti for my sister and brother-in-law!

I’m flying to Kelowna with the two boys on my own, and Etienne is going to drive the car up packed with all of our stuff. It’s ridiculous how much stuff you “need” once you have kids. Highchairs, play pens and strollers can fill up a car’s trunk space pretty quickly! Last time I flew with the boys on my own, Wally was only about 2 months old and was not exactly a chill baby; luckily, the nicest guy was sitting next to me and he was so nice about my fussy baby and busy toddler. I’m hoping this time will go much more smoothly.the boys

Spring also means baking with light, fresh flavors. I’ve got so many ideas for recipes coming down the pipe, with all sorts of berries and bright colors, and hints of lemon and lime. So many recipes, so little time!!

What gets you most excited about Spring?

I’ll leave you for now with this version of my white chocolate chunk almond butter cookies using pastel M&M’s. I’m also considering putting them into a skillet cookie…seriously, so much fun.

  1. I am so glad that you like the book Katie. I thought of you immediately when I bought the book. Jamie is a Hardisty girl that lives in Camrose now. She is a very creative artist and photographer too. Her photos are vintage/antique looking. If I lived closer to her I would get her to take pictures of the girls.   2. Oh my gosh…your boys are ADORABLE!!!!! That photo is the best. My guys are slightly older but I have a photo of them from when they were 3 and 1 and the oldest was kissing my youngest and it melts my heart every time…
